Damn, I didn't know Demi-Fiend can be challenge in DDS1. Then again I only played the main story and didn't bother to check other side quests I couldn't come across.
Does he return as well in DDS2 or is there someone else in place of him?

He does not return in DDS2. There is a different superboss in that game.
