1 lb Yam
1 lb Eddoes
2 onions
4 sprigs thyme
2 scallions
4-6 tablespoon olive oil
1/2 teaspoon salt
5 cloves garlic
1 pimento pepper
1/2 teaspoon black pepper
2 tablespoon parsley
2 medium tomato
1 scotch bonnet pepper

I'm a Lucian, and this is the dish my grandma fed me about 3 to 4 days a week. Salt fish at that time was " the poor man's meat" Not anymore😀lol

Hey Chris, wicked dish bro. We love it in Dominica. We do the codfish same as you but we dry fry the codfish with SLIGHT curry powder. Also it's never complete without green bananas. Caribbean food IS the best food.
I've lost my mom to Covid. She died in April. I haven't seen eddo's or yams here in France (yet?) nor salted fish, so I'll have to do with fresh fish and rice: tomorrow! Thank you Chris for being such a great guy.

Here's a tip Chris when washing vegetables or provision that has sand or dirt, transfer to another dish or container-to avoid residue which tends to settle at the bottom
This dish looks so delicious. I live in Michigan, I have look everywhere for Trinidad pimento peppers I cannot find it. I did find American pimento peppers not it is nothing lime the Trinidad one. Any suggestions where I might be able to order some online?

I was shocked to find out in jamaica they don't call it provisions they call it food they thought I was weird when I ask for my fish with dumplings and provisions at my local jamaican restaurant.....they kept saying you mean food took me awhile to realize they meant ground provisions. Go figure 🤔
