Canning Chili Beans / Brooks Style Chili Hot Beans

  • If anyone cans and puts chili beans in their chili or any other foods - this is a must try. We have been canning these for years and they are one of our favorites. We add them to the chili we make. They taste very close to Brook Chili Hot Beans and are one of the easiest to pressure can. This one is a must try! Recipe below..........YUM!

    Recipe for Brooks Style Chili Hot Beans: makes 8 pints
    2 T chili powder
    2 tsp. ground cumin
    2 T paprika
    1 tsp. black pepper
    1 T ground coriander
    1 tsp. cayenne pepper
    1 T garlic powder
    1 tsp. crushed red pepper
    1 T sea salt
    1 T dried oregano
    canning salt
    4 cups dried beans (washed and drained)
    Mix all spices together and divide equally among 8 clean pint jars. It will be approximately 1 rounded tablespoon per jar or 1 level tablespoon + 1/2 level teaspoon. Add 1/2 tsp. canning salt to each jar. Add 1/2 cup dried beans to each jar. Top with boiling water, leaving 1 inch of headspace.
    Secure lids and rings finger tip tight and place in pressure canner. Follow manufacture instructions on amount of water in canner. My All American Canner states 3 inches of water. Secure canner lid, bring to a boil, letting steam vent for 10 minutes before placing jiggler on. Follow process time for your elevation. I process my beans for 75 mintes at 10 lbs. of pressure. Do not remove canner lid until pressure has returned to zero. Remove jars and let them sit on counter for 24 hours - making sure all have sealed properly. Remove rings and store for later use.

    I saw this recipe a few days ago and tried it last night. The aroma of the spice blend was amazing!! I was leery when I saw the ratio of water to beans and beans uncovered after everything had cooled down. I was thinking maybe I should have soaked.. I had to open a jar to test tonight and WOW I was impressed.... The flavor was fantastic and the sauce was super thick just like opening a can of chili beans from the grocery store. No worries about the uncovered beans now... I will be canning several batches of this in the near future...

    I am from Arizona and I have always had beans in chili if chili does not have beans then it’s basically meat sauce but everyone has their own unique way of making things so I do enjoy the difference between people and their cooking styles

    Fellow Hoosier here. Beans are a must in chili. Just started learning to can this year. I have a pressure canner but I’ve just been doing things that require water bath canning so far. Can’t wait to try this recipe out.

    I'm in Morgan County Missouri...Beans in chilli always! We do chilli one day...chilli dogs the next day and then chilli Mac the next day! We also put cheese and onions on top! Good eating right there! 👍 Thank you ~Pam~

    I love your seasoning recipe. I do soak my beans for 24 hours and bring to a simmer before canning. I used to can them dry but have learned soaking removes the

    I made theseas my first pressure canned foods and they turned out perfect! Used them in my chili tonight and it was delicious, hubby thought it was a tad too spicy so I'll half the hot ingredients next time. Thanks for the recipe!

    I live in S. Carolina and we put beans in my chili. I also lived in Indiana, Kentucky and they used bean in chili as well. I sure will give your bean a try. I just got 20lb of pintos and I was gonna can them plain but we love eating chili in the winter so that’s a great idea!

    Update......I finally received some canning lids and canned 7 quarts of the "mild" version omitting the cayenne and crushed red pepper. Also used small red beans like Brooks uses in their chili beans. Made a batch of chili and added a bit more chili powder and cumin to our liking. It was delicious. If I want spicy, I can add the cayenne and red pepper after the fact. This also makes great chili dogs. Thank you for your recipe. Will definitely can more using your recipe.

    We are in "deep east" Texas. Texas tastes vary by region. Our chilli does not typically have beans in it, if you make this dish Tex-Mex dish, and even add meat it would just be considered beans, but we luuuv our beans this way! Thanks for the video.

    I am from Indiana also. We can no longer get Brooks chili beans, which I have used for 42 years of making chili. I always used the mild ones, so maybe I will just tone down the hot peppers some. Thank you. The Bush chili beans suck.

      2 1/2 Acres - when the kids were little, I used to put the beans in a food processor before adding them to my chili. It gave it a nice, creamy texture plus added lots of flavor without seeing the actual beans. Try it sometime! 😋

    Do you ever have steam leaking out from around the lid seal where it contacts the pot?

      rain coast - no, I don’t. I’m very careful storing and caring for my All American Canner. It goes back in the box when not in use. I always wondered how the metal to metal contact would work though. The instructions say to apply any food grade oil to the rim, which we have done (first use and occasionally thereafter).       Check the oil around the seal. It could leak if it is dry.

      Hi and thanks for your comment. That jar lifter is at least 30+ years old (I think it was made in the 60’s) and was given to me back in the 1980’s. I love it and find it’s so much easier than what they sell nowadays. Unfortunately I have no idea where to buy one. Possibly shop around on eBay for vintage canning equipment. I was just lucky!

    Do you think you could leave out the cayenne pepper and red pepper for a copycat version of Brooks Mild Chili Beans? Have always used Brooks mild beans but moved a few years ago and they are not sold in this part of the country. Have been looking for a copycat recipe for the mild version since I moved.

      I would think it would be worth a try. Make a small batch by cutting the recipe in half. You wouldn't be out that much if your un-happy with the flavor. We love it but totally understand about the spice. Thanks and please let us know how it turns out so we can pass your findings along.

    I would like to make QUART jars. How many BEANS per jar and how much SEASONING? ALSO how long to pressure cook for?

      The recipe in the description is for 8 pints. 8 pints = 4 quarts. Basically use the spice recipe and divide it equally between 4 quart jars. Add 1 cup dry beans to each jar. Top with water and Process 90 minutes.

      I would use canning salt. Pink Himalayan salt has minerals in it that could affect the quality of the food you’re preserving.

      I don’t know why you couldn’t. Just follow guidelines for pressure canning raw meat.

    I'm from Davenport Iowa. BROOKS beans are so hard to find here and they are our favorite . I just started to learn to pressure can. Just brought a canner today. Wish me luck. I am a little intimidated by it!

      Congratulations on getting a pressure canner! It’s really not hard - just follow the directions and you’ll be fine. This recipe is very much like Brooks beans. I hope you try it and enjoy them. Good luck! 😊

    It’s not chili without beans it’s just hamburger meat with spices‼️LandOf Lincoln.
