I don't need this kind of volume but that looks like a great oven. Need a good sized kitchen for it or another room.

What type of basket do you use ?
Hi Matthew. Thanks for sharing. I have 2 questions about the oven.
1) Is it possible to set different temperatures for each heating element?
2) Is it injecting steam from a separate boiler at top, or injecting water to reservoir at the bottom?
1). You can't set different temperatures but you can adjust a % of heat to get them all even/the same.
2) Pretty sure its a reservoir at the bottom.
Could I use this for scones & bagels? How about cinnamon rolls & brioche?
Yes for sure you can. I have done bagels and biscuits. I've done brioche as well but it took a few bakes to get them dialed in.
I'm ordering mine next week, so super appreciative of this video :) thank you! A couple questions for you:
1. I normally bake my loaves at 450 in my convention oven-do you recommend preheating the SB oven to 525 for each bake, and can you explain why you go so high? Is it just because you turn off the oven once you load the loaves in?
2. I bake my loaves in regular bread pans rather than the open bake that I see most bakers doing with the SB oven. I'm unsure if this will cause maybe a darker or even burned bottom of the loaf-do you think that will happen or will it bake normally in the bread pans as the convention oven?

1. If you are baking cold breads from the fridge the oven drops when you load the bread a fair bit. The high preset helps buffer that. I know a few other Simply bakers that do 500 but I think 525 is better for my breads.
2. You can bake in tins in the oven and you won't burn the bottoms. You will have to watch the tops if they are pretty tall though.

You can but I have not yet.
Hi Matthew, I bought the baking steel plus (20x11) and was trying to find silicone baking mats like the ones you use. Where can I find them? I did look on Amazon, but I want to make sure I get the right ones.
I got them with the Simply Bread Oven.

You didn't say what temp you went back to after the first 20. The inference was back to 525. I am in the market for another oven. Do you use it for other things? Thanks !
I just turn it back on to 525. I use it for a lot of other things.

Would it be worthwhile to just preheat the oven to 25-50 degrees hotter than you actually want..knowing it will drop when you open the doors...then set it to desired temp after closing doors?
Yes i think so. Lately I have been just letting it rip at 550 then turning it of after firing.
When you introduce steam into the oven, do you turn off the heating elements?
I steam the oven then turn it off once it has been steamed. The steam wont generate if the heating element is off.

Two hour preheat in my opinion seems a lot. I’m sure it needs it but the power usage seems high. Does it wreck you power bill?
No not at all there’s no noticeable difference in my power bill.

It varies. I have a fulltime job, this is just a side hustle.
