    My favourite winter soup is carrot ginger tyme soup. It's made with 2 medium unions some sticks of sellery about 500 grams of carrot, an inch (or more I use 2 inches) of fresh ginger grated,lots of tyme (table spoon of dried or lots of fresh leaves) vegetable stock cubes up to taste..lots of fresh grounded black pepper.
    You just glaze the sliced uion and sellery in a little olive oil..throw in the tyme and grated ginger and slized carrots black pepper and veggie stock..add water to just covered..bring to the boil and cook until carrots are done (most of the time i stop cooking them half way..about ten minutes and just leave it covered for another 10 to 15 minutes.) Then blend the soup until smooth and sprinkle some fresh spring union slices on top...mjommie ..sweet smooth herbal and little heat from the ginger and pepper, and vegan and cheap. If you have the sweet convied ginger(in the syrup)..slice a part of it finely and mix with the spring union equal parts as the topping

      @@MarysNest thanks for your reaction🤗 I just want to add a little thing...if people can't afford the fresh ginger use grounded dried ginger(you can add more later if you like it..even when the soupe is nearly ready)..about a teaspoon and glaze that with the unions. You can skip the sellery or use something like a bellpeper or leek just the unions are also fine .i like the soup thick..but of course you can add more water/stock up to your liking..even last moment.If people want it more creamy..you can add some yoghurt before serving (also the vegan ones) or creme fraiche.Just stir it through the bowl you serve

    Thank you Mary!! I love the book recommendations and just purchased. I have my mom watching your videos too. I moved into the new house on almost 20 acres and I'm still unpacking but getting everything ready for homesteading. As soon as the weather improves the raised beds will go in. I'm currently growing herbs in a Tower Garden and then they can be freeze dried. I'm going to freeze dry aloe leaves for skin care/abrasions. I'm definitely going to have a medicinal garden. God bless you and your family, you're a wealth of knowledge and I'm so grateful to be a subscriber!

    I came across your channel a few days ago and today I, sort of, made this soup. I’m doing the three rivers pantry challenge and used what’s in the house. I used onions, garlic, carrots, cabbage and mushrooms with chard, basil, dill, oregano and parsley. I’m trying to add more greens and herbs into my everyday meals and this soup really helps.     I found your channel late last fall by suggestion from Jess at Roots and Refuge Farm and how much she learned from you. The fall and winter I just went through kept me from being able to dive into what you offer, but now I can do it. I’m planning to learn all the kitchen skills from you and be able to revamp my grocery buying and my pantry to better feed me and my husband. He needs foods from scratch since he is on dialysis. We are going to give his body what it needs to heal while we wait on a kidney transplant! 2023 will be my year of learning and implementing!     Hi Mary!
    I have been making a delicious asparagus soup using your Golden Broth recipe, and have discovered a unique way to add to your Golden Broth ingredients. When shopping for yellow onions and heads of garlic, I gather up all the loose "skins" and include them in each plastic bag... I let the cashier know what I have done and that I am making a vegetable broth. Both Raley's and Whole Foods thanked me for using their "scraps" that just would have been vacuumed up. Love your videos!

    Mary, I need to avoid so many foods as oxalates ,high histamine foods, and liberators! I didn't know that about arugula. Thank you, Mary 😊 I have a lovely book called The Herbal Home Remedy book by Joyce A. Wardwell. It has simple recipes for tinctures, teas,salves,tonics,and syrups.

    Hi Mary. Thank you it looks wonderful. I'll be sure and try this one out. I have so much to learn about, I'd love to grow my own herbs. I'm not even sure when each come in season. Nor how to use them. Naive I know. I guess sad but I pretty much use common seasonings and herbs. Herbs meaning parsley I love parsley. And as far as parsnips I'd like to try some. So I think I'll be picking 1 up. I never even introduced them to my children. Oh my. I'll make myself feel better after that one by saying I don't won't eat peas. But I did feed peas to my kids. I'm rambling again. I'm going to search ur videos now and look for something on herbs. I did do your beef bone broth about 2 weeks ago. I haven't used it yet. I followed everything you said and done by the letter. So I'm sure it will be amazing like you. God bless

    I'm like you in that I don't like cold drinks in the winter and so I loved that you mentioned that this soup would be a good way to get our greens in! Your videos are soo informative! I wonder if one could can this soup or would it destroy all the goodness? I could never eat that much before it went bad. What are your thoughts on canning? Thanks so much!

    Love your information!! I thought some medicinal herbs are destroyed by temps that are over 110 degrees??

      Great question. As with all living things some nutrients are decreased when heated but most become more bioavailable to our digestive systems when heated. Love, Mary

    Would it be possible to can some of this soup? Of course I understand all the ingredients you use would be USDA approved to can. I think this makes a big pot of soup and not sure my husband and I could eat this fast enough.....TY

    I made this tonight, it was potent and delicious. I blended it up but it had that almost gummy-ish mouth feel that I have only before detected in certain prepackaged soups. Does anyone know what causes that? Could it be the potato skins?

    Off topic but when you can your bone broth does a white sediment appear at the bottom? I just canned for the first time. Followed directions and canned for 25 min after the 10 min vent. They all sealed but when I went to put them up they have a sediment at the bottom. I doubled strain before placing in jars.

    Love your information, Mary but I think you put too much emphasis on the harm herbs can cause. I am a certified herbalist and traditional naturopath and I've not heard that parsley is high in oxalates. Spinach and potatoes are on the list for this as well as soy and legumes. "Bacteria known as Oxalobacter formigenes rely on oxalates as a source of energy, which helps lessen oxalate buildup. Some people have more of this bacteria than others. Antibiotics can be especially hard on this type of bacteria, leading to quick oxalate buildup." So, it is a lack of proper bacteria in the gut that sets up the problem with kidney stone formation. The benefits of herbs being added to soup far outweighs any concerns people should have about using them. I hope people do their own research and come to the conclusion that herbal medicine is far safer than even some of the over-the-counter medications they may have in their own medicine chests.

      Hi Mary, I understand completely. I learned about the high content of oxalates in parsley from a number of sources. One was from my father’s doctor when my dad developed kidney stones. The doctor provided my father with a list of foods high in oxalates. Parsley was on the list. There were various scientific studies cited, and this was one of them: pubmed.ncbi.nlm.nih.gov/7410821/ But as you shared, just as phytates, have a good and bad side… Clearly oxalates do too. What do they say… There’s always two sides to every story! Lol! I am simply going on what my father‘s doctor told him so it may be something for people who have a sensitivity to oxalates to pay attention to. Thanks so much for all the information you shared.       Good to know. Oxalates inhibit the absorption of calcium too. I have osteoporosis, so I was told to watch how much I ate of them? With so much misinformation around, not sure that was correct or not.

    Arugula is actually quite low in oxalates. Kale isn’t too high either. Spinach and Swiss chard are VERY high in oxalates. Even your celery, carrots and parsnips are higher in oxalates than the arugula. Brassicas like arugula and cabbage tend to be low in oxalates.
    Oxalates can deposit themselves all over the body, not just in the kidneys. They are a plant toxin and can contribute to arthritis, fibromyalgia, osteoporosis, bladder pain, headaches and brain fog, vulvodynia and a whole host of other chronic health problems.
    Everyone should be avoiding oxalates. We have been misled by modern nutrition advice. Things like almonds and other nuts, sweet potatoes, spinach and chard, rhubarb and many other high oxalate foods should be limited if not cut out all together. We would all be much healthier if we all followed a low oxalate diet.

      Thanks for sharing. The good news is that boiling foods high in oxalates significantly reduces their oxalate content. 🤗 especially carrots and other root vegetables. But those prone to kidney stones caused by oxalates should be careful about consuming foods high in this compound. 🤗
