This reminds me of one year in the dead of Canadian winter when I was following a deer trail through the woods and ran out of daylight and had to camp with no tent or sleeping bag. I built a fire and heated rocks and buried them and covered them with sand and tree boughs to keep me warm....13 hrs in the cold feeding the fire with wolves closer than I thought they were. It was beautiful!

Railway iron is often used in hangis instead of stones. Saves on all that dangerous exploding stuff. I would figure any heavy iron or other metal would do the job in place of those stones. Yes the Maori have used the Hangi in New Zealand for years. Phonetically speaking it’s pronounced “Hungee” not Hangee. And it is the food of the gods. Started watching your series a few weeks ago while I was undergoing treatment for cancer at St James hospital in Leeds. It as helped me through a very dark time ,so I thank you very much. Just one complaint I have to make is about the food ! I have throat cancer and can barely swallow so I have been eating soup for weeks and watching you make some very good food on an open fire as been torture ! Keep up the good work you have made me very happy.

Simon, we did something like this at summer camp. We would line a hole with the stones and built the fire in the lined hole. We could then rake the fire out and then line the hole with wet grass, above and below the food. We put a chicken, vegetables, etc in a pillow case. More wet grass and then cover with dirt. That way when you’re leading a group of adult leaders through the woods, you could remark that you were a little hungry, and then dig up dinner. Great video.

Introducing my 85 year old mum to the joys of TH-cam we came across this, delighted us both and reminded us of our Christmases in the Caribbean when she taught at Ross School of Medicine in Dominica, the first year she was there we tried pit roasting a (whole) turkey and then proceeded to do so the every other Christmas we spent in Dominica for the 20 odd years she taught there. Used to wrap the turkey in banana leaves and 2nd or 3rd time round built a cradle out of wire coat hangers to get the turkey in and out of our pit. Great video that brought back some even better memories. Thanks from us both.

She is one of the most beautiful dogs I have seen. Excellent manners too. Years ago, when I was in my teens, we did a luau and it was fabulous! I'm going to have to try and make one of those once the ground thaws out. We have a blizzard raging outside right now. Winds gusting up to 60 miles an hour. Can hear branches cracking. Simon, in Texas USA there is a fish called a Carp. Special Texas cooking instructions are this...do a fire, wrap Carp in mud. Cook on the open fire. When done remove mud...throw away the Carp and eat the mud! May your feet on the trail be sure, your fire warm at night and the trail tales be true!
In the UK carp fishing is a big thing. Lakes are stocked with carp, a 45lb carp can cost the fishery owner over £5000. People pay to fish for them and if they catch them they are handled like a baby and released.

Brings back memories of how my Dad would put a hangi on for News Years Eve and all the Whanau showed up for it. Was a Railways man and would start up that fire to heat up those irons at daybreak while mum and I peeled a ton of spuds. Was always a late feed still but so worth it.

Hi Simon. One trick to reduce burning is to coat all faces of the food with cooking oil and place one pan inside another but with pebbles between them to create hot air (like our home oven ?) rather than direct pan contact with the heat source... Great stuff as always. Cheers Si

This was totally coolio! I had never heard of "Hangi" before, had to look that up. I've done many clam boils on the beach before, I thought this would be similar, but its not. We used to call this a wart pit because the sides are vertical and the pit base is deep. The fire struggled a bit for lack of air flow and you covered the top with wet burlap over sticks to create an actual oven chamber. The food was applied directly on top of the hot rocks. In a clam boil, the pit is much bigger and rounder with shallow, sloping sides because its generally done on a sandy beach. The pit is fully lined with rocks first and the fire rages above the rim of the pit to heat the rocks. You can use a pitchfork to rattle the rocks around to let the embers fall down between them if you want, but removing them would be a lost resource and would burn bare feet. Wet seaweed is then loaded in directly all over on top of the hot rocks and embers and then layered with the food but only in the middle. The food pile and the edge of rocks on the rim are covered in more seaweed. The food is arranged and layered in the boil in a cook time logic based on the food type. Usually a few carrots are placed loose in the top of the boil to serve as a thermometer. The whole pile is covered with more seaweed and wet burlap. The boil just steams away while you drink too much! :-) This was an actual oven! You totally rocked my mind! Totally cool!

Simon, to get fire raging, dig 2nd hole just as deep, then a horizontal connecting bore. Air gets sucked into the bottom, then when hot enough, plug the bore.
Awesome video, the nature look quite similar here in North Sweden there, are you waiting for snow? Nice hat, massa we called it in Sweden. Christmas food cook outdoor especially underground is challenging. What's the temperature there today? Our ground are frozen, so it is difficult to dig hole.

Thanks for sharing this Simon, I think I read a slightly different variation on this many years ago in Lofty Wiesmans SAS book where fresh green foliage, grass, leaves etc is placed on top of the red hot stones then the food and then more foliage. Now if I remember this right, it was about 30 years ago. He left a stick going down over the food parcel and started to bury it, next he gave the stick a wiggle to make a hole and poured water down the hole to produce his steam then sealed the hole.
Simon, have you thought about doing a video on dishes and pot cleanup? Are water austere locations are more difficult than areas where the water needs to be treated before use? Your cooking series is a real motivator!

When cooking meats and veggies over a heat source you can’t regulate well always put a layer of sacrificial onions on the bottom. The moisture will keep everything above from burning on the bottom. If you like onion great, if not not much waste. Merry Christmas and thanks for another great video.
👍👍👍. Back in the 70's I had plenty 'underground' meals .. 2000+ metres below surface 😏. Saturday morning fry-ups were a regular, using a shovel to cook in and the orange-coloured 'marking (wax) chalk' as the heat source 😊. On a more serious note .. Now that was very, very nice .. have done similar with the scoff wrapped in foil. Thanks for sharing and bringing back the memories 👍. Simple Fare .. looked delicious .. and food always tastes better cooked and eaten in the outdoors. Bloody hell Simon I was only going to watch a few minutes of this on this Christmas afternoon instead of the telly or playing a game with the family. However, you got me mesmerised and I couldn’t turn off. You are one amazing person Simon with so much talent. I truly believe that before we are born God gives out talent and ability but he get fed up and dishes load out willy nilly and then finds he has to economise and so people like me are given virtually nothing! The food looked amazing and Maggie certainly enjoyed it. The problem of cooking outdoors is that once it’s ready it has to be eaten fast so as not to go cold. Many is the breakfasts that I’ve cook out in the mountains that are stone cold before the last sausage has been scoffed. All that being said your food certainly made my mouth water. Brings back memories of how my Dad would put a hangi on for News Years Eve and all the Whanau showed up for it. Was a Railways man and would start up that fire to heat up those irons at daybreak while mum and I peeled a ton of spuds. Was always a late feed still but so worth it.

Burnt potatoes or no burnt potatoes, no one would refuse that dinner while in a wet woodland. It looked beaut.

One trick to reduce burning is to coat all faces of the food with cooking oil and place one pan inside another but with pebbles between them to create hot air (like our home oven ?) rather than direct pan contact with the heat source...

This was totally coolio! I had never heard of "Hangi" before, had to look that up. I've done many clam boils on the beach before, I thought this would be similar, but its not. We used to call this a wart pit because the sides are vertical and the pit base is deep. The fire struggled a bit for lack of air flow and you covered the top with wet burlap over sticks to create an actual oven chamber. The food was applied directly on top of the hot rocks. In a clam boil, the pit is much bigger and rounder with shallow, sloping sides because its generally done on a sandy beach. The pit is fully lined with rocks first and the fire rages above the rim of the pit to heat the rocks. You can use a pitchfork to rattle the rocks around to let the embers fall down between them if you want, but removing them would be a lost resource and would burn bare feet. Wet seaweed is then loaded in directly all over on top of the hot rocks and embers and then layered with the food but only in the middle. The food pile and the edge of rocks on the rim are covered in more seaweed. The food is arranged and layered in the boil in a cook time logic based on the food type. Usually a few carrots are placed loose in the top of the boil to serve as a thermometer. The whole pile is covered with more seaweed and wet burlap. The boil just steams away while you drink too much! :-) This was an actual oven! You totally rocked my mind! Totally cool!

Simon, to get fire raging, dig 2nd hole just as deep, then a horizontal connecting bore. Air gets sucked into the bottom, then when hot enough, plug the bore.
Awesome video, the nature look quite similar here in North Sweden there, are you waiting for snow? Nice hat, massa we called it in Sweden. Christmas food cook outdoor especially underground is challenging. What's the temperature there today? Our ground are frozen, so it is difficult to dig hole.

Thanks for sharing this Simon, I think I read a slightly different variation on this many years ago in Lofty Wiesmans SAS book where fresh green foliage, grass, leaves etc is placed on top of the red hot stones then the food and then more foliage. Now if I remember this right, it was about 30 years ago. He left a stick going down over the food parcel and started to bury it, next he gave the stick a wiggle to make a hole and poured water down the hole to produce his steam then sealed the hole.

When cooking meats and veggies over a heat source you can’t regulate well always put a layer of sacrificial onions on the bottom. The moisture will keep everything above from burning on the bottom. If you like onion great, if not not much waste. Merry Christmas and thanks for another great video.

Back in the 70's I had plenty 'underground' meals .. 2000+ metres below surface 😏. Saturday morning fry-ups were a regular, using a shovel to cook in and the orange-coloured 'marking (wax) chalk' as the heat source 😊.

Bloody hell Simon I was only going to watch a few minutes of this on this Christmas afternoon instead of the telly or playing a game with the family. However, you got me mesmerised and I couldn’t turn off. You are one amazing person Simon with so much talent. I truly believe that before we are born God gives out talent and ability but he get fed up and dishes load out willy nilly and then finds he has to economise and so people like me are given virtually nothing! The food looked amazing and Maggie certainly enjoyed it. The problem of cooking outdoors is that once it’s ready it has to be eaten fast so as not to go cold. Many is the breakfasts that I’ve cook out in the mountains that are stone cold before the last sausage has been scoffed. All that being said your food certainly made my mouth water. Kath is about to dish up the Christmas dinner, it had better be up to your standards is all I’ll say. Cheers Mike. PS I’ve listed several of your videos for watching later. 👍
