59:08 - Weirdly enough this is actually a thing I happen to have recently learned about! The answer is usually traders from Europe. Japan in particular has a really interesting history with bread since it can directly be traced to Portuguese traders during the Meiji Restoration! In fact, old Japanese didn’t have a word for what they brought so the word for bread in modern Japanese is “pan” the same as Spanish and Portuguese. That’s also the reason why many Japanese breads are sweet, Portuguese bread that they brought were sweet egg-based breads!
As someone who lives in Toronto is a researcher and is pretty dependent on the healthcare system one way or another, this is really really appreciated! Wish I heard about the event while it was ongoing… Edit: I can’t seem to buy anything at the matcherino link right now either?
