Polynesian Pearl Diver Cocktail from Django | In The Drink

  • The Pearl Diver is one of the definitive classics when it comes to tiki cocktails. Infamous for its use of butter in the Gardenia Mix, it is absolutely one of my favourites. It was invented by Donn Beach some time around 1937, and was 'lost' for many years, until the Gardenia Mix recipe resurfaced in 2007 - giving the cocktail an air of mystery.
    However, it anachronistically appears in the film Django: Unchained in a nod to an old Film Noir called The Blue Gardenia. I have seen some articles and videos refer to this order of the 'Polynesian Pearl Diver' by Leo DiCaprio's character as the filmmaker's way to convey to the audience the decadence that this plantation owner lives in, as they would not recognise any of the lavish cocktails from the so-called 'Golden Era' in the 1860s. This doesn't make much sense to me, and I therefore conclude that Tarantino was simply making a reference to an old film as a means to portray Monsieur Candie's lifestyle as decadent.
    Recipe:
    - 1oz. orange juice
    - 0.75oz lime juice
    - 2 barspoons velvet falernum
    - 0.75oz. gardenia mix
    - 1.5oz Gold Puerto Rican Rum
    - 0.5oz Jamaican Rum
    - 0.75oz aged demerara rum
    - Shake well with ice
    - Open pour
    - Garnish pineapple fronds, orchid, and cocktail umbrella
    Gardenia Mix Recipe:
    - 250ml unsalted butter
    - 250ml honey (orange blossom if you can get it)
    - 15ml vanilla syrup
    - 30ml cinnamon syrup
    - 15ml allspice dram (pimento dram)
    - Heat only enough to soften butter to the point of being able to mix in the rest of the ingredients (I accidentally browned my butter a little).

    Loving this niche you're occupying ITD! Film AND cocktail info, super easy and engaging to watch! Literally watched Django the other day and caught the reference thinking... 'Isn't that a Tiki drink?'. The edit at 8:31 was a proper spittake moment hahaha

    LOVE THE PEARL DIVER! I got the fancy Pearl Diver glasses for Christmas! Haha... the Gardenia mix would make any cocktail tastes amazing!

      I'm honestly tempted to try it in any cocktail that already has honey in it - because that's such a large part of the Gardenia Mix I wonder how well it would sub out

      @@FlourEggsYeast look up Pearl Diver glasses on Google.. there’s an interesting history to them.. they were basically lost.. none remained, until just recently when Cocktail Kingdom dot com decided to use old references and redesign them

    Nice improvisation on the Pearl Diver glass. Haha. Interesting tidbit on the whole Django/Polynesian Pearl Diver.

      Thanks! It was actually quite hard to condense all of the connections people had made between the drink at the film, you'd be surprised how much people can talk about this stuff!

      It makes me wonder if Django is set in the 'alternate history' of Tarantino's films, like where the Americans kill Hitler and the Manson murderers don't get Sharon Tate...

    This is a Pearl Diver's Punch. The Pearl Diver is a streamlined version of the punch. I'm inclined to believe that the version in The Blue Gardenia was probably the Pearl Diver due to that version being the one on the menu in the 1950s. Interestingly enough, both movies discussed here got the Pearl Diver glass wrong. I'm not sure when the word "Polynesian" was first used.

    I'd suggest pouring the Gardenia first, so that the rest of the less viscous liquids could clear out your jigger.

    Agreed with slightly lowering the music, but I like the music choices just need to find the right levels. Loving the How To Drink vibes but with movie references.

    Great video. And the drink looks Fantastic.
    I do not want it to be misunderstood, but in my opinion, the music during the video is a bit too loud and slightly distracts when you are talking. This is once again just my opinion, but I think if you can slightly reduce the volume of the music while you are sharing those interesting facts about the drink.

    How did you get your gardenia mix like that….looks like a type of syrup. Mine just separates and goes lumpy? Lol

      I made mine in a pan, by melting the butter and the rest of the ingredients together - although after sitting for a while it does want to separate, so what you see in the video was my best attempt to get it to re-settle before using it on camera!

      Only other question I have is how long does it last for?

      The mrs wasn’t a big fan of it. Think the butter pushed her away lol
