    Beer brewer here and this is exactly what I expected you did and how I made a simple 5 gallon bucket fermeter and got the supplies from a home brew business here in my city. It was super cheap to build too, less than $20, tap, grommet and airlock included. Fermentation is pretty universal like that, so by all means support your local small homebrew small businesses and buy your products from them as they are the PERFECT source. I love that tip about the small Mason jar (which I have) fitting inside the big wide mouth. I did not know that! Brewing supply stores may also have other handy fermentation products useful for your veg. fermenting.

    if you use a grommet from the hardware store you can skip the bung entirely and drill a much smaller hole

    Great video. I was bummed that I'd have to order something to ferment my kraut in, but we happen to have a brewing supply company in my town, so as soon as I saw this, I ran over there, they had the parts, and half an hour later (and a fraction of the cost) I had some fermenting jars. Thanks so much!

    Thanks for making your video. I use the small jar and the plastic lid you show which works very well but I don't use the airlock. I just screw the lid without a gasket down softly and have never had mold in years of making Sauerkraut.

      zpoedog So 'technically' a lid is not even necessary, as long as the vegetables stay submerged in the solution and does not touch air?? that is a question, not a statement. :) .. anybody know the answer?

      bonanzatime- yeah- some people just skim the mold if you get mold. Open fermentation is sometimes done with beer- wild yeast . Fruit flys can ruin a beer though.

    I made very similar fermentation vessels but I use a smaller hole in the lid and a grommet, and really important I think is that I use a rotary tool to sand a near half inch notch into the little 4oz jar used as a weight. This lets me use the cap to press the weight down into the vegetables making sure they stay under the brine, and and built up gasses have a path to escape through the air lock with the notch in the weight. With your setup it's probably fine since the plastic lids are not air or liquid tight, and the rubber stopper would blow first also. I use silicone gaskets on my plastic lids to make sure they don't leak.
    An added benefit of this style setup is the ability to use any wide mouth cap to seal your project and refrigerate when done, and transfer the fermentation lid, air lock and weight to another clean jar to do a whole new project. I like to use half gallon wide mouth mason jars.

      +Linda Jo Thanks for the suggestions. This has worked well for me so far but I have no doubt that with a little more effort and your suggestions it could be improved on. I have an actual fermentation crock as well but sometimes I prefer the mason jar because....well, I just don't always want 5 gallons of sauerkraut. :)

    My 1 gallon mason jar came with a metal screw on lid (not the canning type). Can I use that instead of a plastic lid? Thank you!

    I want to use fido jars for fermenting. I am looking for someone to show me how to drill that lid and I have not found a demo. Can you do a demo on how to drill a glass fido jar for an air lock?

    So were you able to place the smaller jar in the larger jar as a weight and the smaller jar sat low enough for the plastic lid to screw on top?

    at 5:23 I can hear your male Quail, How far were they? I want to get a male Quail, but I am concerned about the noises they make.

      +shizzle2233able lol, I didn't even notice that. They are basically on the other side of the wall from me (to my right). Honestly, the male quail aren't too terribly loud. I can hear them in the other room but its not that loud. I am not sure exactly how to explain that to you but compared to a chicken they are much quieter. I would compare it to a parakeet maybe. I hope that helps a little.

      The neighbors can all hear my male quail crowing, but they love the sound, even when they have no idea what it is besides 'some bird singing'. nobody can hear them inside the house, and I can't hear them in the garage when it's closed. (20' from the quail, and with no insulation). worry not about their crowing. :P

    Do you have a video on how to actually use the jar? What is the brine recipe? How long does it take to ferment? Etc...

      I am sorry but I haven't done any videos on fermenting. The basic brine recipe is a tablespoon of Kosher salt to a cup of water. That will work for most things. You can add spices and things of course. The length of time varies depending on what you are fermenting and your taste (and temperature). It usually takes about 2 weeks to a month though. I will see what I can do to do a video on that and get into more detail at some point.

    Hi! Is there a reason you don't just use the regular metal canning lid and ring? It seems like it would be easier to drill a hole in it... I have to make this myself, and I don't exactly have man-tools... do I have any other options?

      No reason exactly. I am sure a metal lid and ring would work as well. As far as tools, if you don't have a drill maybe you can borrow one from a neighbor or friend? I am not sure that there is another way to get a hole cut in it and keeping it straight enough for the stopper to seal it up. Wish I could help more but that's all I can come up with at the moment.

      absolutely. This is completely reusable. Just wash it out and start over. :)

    I have seen included with the 'store bought' fermenting lids, they use sealing rings as well. Have you had any problems as a result of not using the rings? Thanks so much for your video! I was able to make mine for $6! Amazing savings!

      It should be able to. Just take it slow and let the bit do the work (don't push too hard).

    after you get the center part of the bit through run your drill in reverse. you will have a clean hole.

    use the spade bit to drill halfway through, then turn the lid over and finish from the other side .... much cleaner hole !!!

    I use a 1 1/4 inch sanding drum from my dermmel to clean up edges.

    why not put the lid against a plank and drill down in the wood - makes a cleaner cut

      Right, that keeps the bit from wiggling around once the pilot tip passes through. I also got a nice clean cut with a hole saw, no plank needed. (Use light pressure, though - as SR says, let the cutter do the work.)

      I bought these parts from the local Macadooles store. I don't really frequent liquor stores....not really a big drinker but they have a home brew section that had the parts I needed. You can also order them online. Hope that helps.

    i make my own airlocks with an empty plastic pill bottle and a short piece of food grade tubing. also i drill holes in the metal mason lids instead of buying the plastic ones. no need for a stopper if you drill the holes a bit smaller than the tubing as the rubber tubing will seal just fine. i cut an angle on the tubing to give a nice point so i can easily feed it through the hole in the lid and the hole in the bottom of the pill bottle.
    i started making these a couple years ago when i got into making cheap homemade wine with store bought juice. they work just fine but it took me a bit of experimenting to perfect it like making the hole a bit smaller that the tubing and putting an angle cut on the tube to help feed it through the holes.

    Im all for saving money and making things myself but i feel like the time and money put into this you could have bough a real set of 2-6 for around $10-$25 of various qualities. I mean unless you got this stuff around your work bench or whatever.

    We drill 100's of the lids. The Ball brand or the cheaper walmart brand lids are all terrible about breaking. Very cheaply made..
    Want 95% success rate when drilling these?
    Use a forstner bit.... End of story! use google to find on ebay.
    Also note that the grommets used for the standard airlock call for a 3/8" hole. The ones sold on ebay generally use a 5/8" hole to install the grommet and the grommet them selves have a 3/8" hole

      the forsner bit is much better putting a block of wood under the lid will reduce the tear out in the lid and therefore the total time to make these
      if you spend a hour to make a part that you only save $1.00 on that means your working at a $1.00 a hour job

    You know those plastic lids come with a rubber gasket, which makes a better seal. . You want to create an anaerobic environment, to cut down on air getting in, and causing mold. i like fido jars personally.

      good suggestion. Really if it is full of brine with the air lock that is a good enough "seal" but it doesn't hurt to have extra.
