Best shrimp noodle salad for summer days

This shrimp noodle salad is inspired by the Vietnamese rice vermicelli. The “dressing” combines my love for the Vietnamese dipping sauce and the creamy peanut butter dressing I like to have with my Chinese smashed cucumber salad. This is the perfect light lunch or dinner on its own or with other side dishes.
Ingredients:
Rice vermicelli
Shrimps (peeled, deveined)
Garlic
Black pepper
Salad:
Cucumber
Carrot
Micro broccoli
Green onion
For the dressing:
Peanut butter
Honey
Fish sauce
Lime juice
Red chili
Water
