Try this seasoning Paprika/tsp Onion powder-table spoon Garlic powder-table spoon Tony’s seasoning-table spoon Cajun seasoning- table spoon Black pepper- 2 table spoon Bind all with mustard. Each time you flip meat add a dash of Tony’s. For maximum flavor add half of a cut up onion on top of your charcoal! Give this a go and tell me how it turns out. If the meal is nasty i will cash app you for the inconvenience!
If you don’t have the chimney, use the pyramid technique. Put a little paper down and stack the charcoal on the paper in a pyramid shape. Light the paper and let coal burn until almost all white
Lol. I hear ya. But it does help to keep a more even cook without having to add more charcoal during cook time. Lesser coals will burn out faster, so with chicken, I like to make sure I have plenty for the full cook
