    Fun fact, you can’t find Enchilada sauce in most Mexican grocery stores as it’s easily made at home with chilies. So instead of paying $2.69 or more, the locals here will pay about .50 cents for a gallon of homemade Enchilada sauce. Much cleaner ingredients too. As a resident of Mexico I discovered this recently. Love your recipes, Steve.

      Here’s an authentic recipe: 2 dryed Chile ancho without seeds
      1 tomato
      Garlic, onion, salt to taste
      You boil the Peppers, and tomato.
      When soft you blend them with the rest of the ingredientes. And ready!!

    Maybe I’ve seen this recipe elsewhere, but honestly, it’s your calculations and comparison of the three sauces that kept me watching! I’ve made keto enchilada sauce from scratch before, but it was a a time-consuming process all the way through to the finished dish, and I’ve never made it again for that reason. I like your quick and easy version, and now I know which sauces to go for!

      As a dweller of the barren North on the shores of Lake Superior at the time I started cooking Mexican food and I could not buy enchilada sauce in a can so I had a look at a few recipes and basically made mine a knock off with very diluted tomato paste, cumin and chili powder and garlic. I thought that was enchilada sauce and most people loved it!

    Great video. Might I suggest checking out Rosarita Enchilada sauce. I have used it for years as did my mom. It contains only 2 net carbs and is pretty clean. It has some canola oil but otherwise nothing objectionable. Also it is cost effective, ( $2.64/20 0z), and has a nice thickness to it. It has more of a restaurant flavor.

    Brilliant idea. I love the simplicity of the chicken “tortilla”. I’ve been using the Keto Connect recipe for years. While delicious, it’s also a lot of work to make the “tortillas” (essentially crepes).
    Your version is way simpler. I’ll be tryin’ it out with some additional cheese (havarti and cheddar) melted on top.

      I picked up Siete Sauce, cheese sticks and chicken today so I could try this recipe. I appreciated not having to find low carb tortillas ss the stores are not close and carry different things.

    Going to try this for dinner tonight, as I actually have these ingredients on hand! Really appreciate the extra effort you took to include three different sauces, and the measurements and ratios. This seems like a great go-to recipe for those nights when you get home and want some thing tasty comforting, but not a lot of work LOL👍😋

    I make my own enchilada sauce with bone broth, spices and a little bit of tomato paste, great idea with the cheese sticks!

    I live and grew up in a family of Spanish and Mexican decent so we always had enchiladas, usually at least once a week when I was a kid. I also live in New Mexico so our version of “chile” is different than in Mexico or any of the other Southwestern states. It’s much spicier and in its purest form is low carb. Needless to say, the corn tortillas in enchiladas are not exactly on the menu when you’re eating for keto so I had very nearly given up on ever eating enchilada or tacos until I discovered Pinche Nancy’s channel and her low carb Mexican recipes. Her keto “corn tortilla” made from almond flour, psyllium husk, and pork rinds is revolutionary. They taste close enough to actual corn tortillas that you can make nearly guilt free enchiladas that won’t throw you out of ketosis. Here in NM we do make rolled enchiladas but, if you ever go to someone’s house for dinner most families make enchilada casseroles. I like the idea here in this recipe so I may try it though, I’ll probably make my own NM style chile because that’s my preference. Thanks for the recipe idea!

      @@suzyhayden8643 , she makes videos in both Spanish and English. Here’s the English version which I found long after I’d been watching her Spanish videos. These tortillas are a cinch to make. I can usually whip up a dozen in under 30 minutes. I’ll usually make a couple dozen when making a family size enchilada casserole. And, as I mentioned before these tortillas are excellent for street style tacos. Enjoy!

    Honestly, NEVER would have occurred to me to wrap cheese sticks in chicken slices, so i think it's pretty original. But I did make keto enchiladas the other day from those Egg Life wraps and they turned out quite well. Not as a recipe for my site, just because I wanted enchiladas! ;)

    The Old El Passo also disclosed GMO ingredients…I bet it is the corn in boldscript.
    I guess the only brand is El Paso in Canada🇨🇦

    It’s always great to see how you detail how many carbs are hidden in ready to use sauces, I’m sure that the sugar is added to make it desired by children. In Australia we have Masterfoods BBQ sauce, it is laden with sugar.

    Nice vid! I highly recommend folks try Rosarita canned enchilada sauce. At Woodmans in Wi, or by the case on Amazon. I've done the case. 2 net carbs per qtr cup. Classic flavor, rich. Wins awards often as best tasting canned sauce. It's better than most and doesn't have those bad thickeners. Does have canola oil, but otherwise very clean. I freeze and thaw in a mason jar to use up a can over time, with no loss in quality.
    I would love to hear more American chefs and influencers pronounce crema more correctly, certainly not hard. CRAY-ma. Of course, the r is a bit different, a slight lilt there, but AY is the way to go on the vowel.

    You inspired me to make keto cheesy beef enchiladas....which I have 1. Never made before and 2. Never ate before .....but after watching this a day or so ago I now want to make it.
    I forgot to buy the sauce yesterday and it is -16 outside today....so I am gonna have to make homemade enchilada sauce. Of which I just did.....with a little finagling using Victoria's Keto Kitchen AP flour to thicken it.
    It was pretty easy, and with the low carb tortillas.... I think....maybe...uh...fingers crossed it will be okay. 😬😏

    I made this last night for my family with the Siete Red Enchilada Sauce. Huge hit! My daughter wants it again tomorrow when we have company. Truthfully it was great. I have to get the pickled jalapeños- we had it with some pickled onions on the side. This is absurdly quick and easy. And a great idea.

    Once upon a time, Old El Paso made a red chile sauce which was hotter than their enchilada sauce. That was what my mom, who was from New Mexico, would use to make her enchiladas. New Mexico enchiladas are flat, with each tortilla, heated in a pan and then dipped into sauce, and layered with shredded cheese, finished with a tortilla on top, with some lettuce and a fried egg. I can see using the sliced meat, quick-fried in a pan, dipped in sauce, and doing as my mom did.

      I am from New Mexico as well.. and usually use the Old El paso sauce.. and sometimes make my own using chili power... I love the flat stacked version of the enchiladas..and prefer having any enchiladas (no matter how they are made)served with lettuce and sour cream over the sauce.I now live in Ky. and my family have these on Christmas morning as a tribute to my heritage and my mom...

      I'm from Arizona and my mom (and, now me) made red Chile with shredded beef, and when we made enchiladas we made ours they same way (flat, layered) but we used the red Chile and put the meat in between with our cheese. Oh and she usually put a little very finely diced onion in the layers. - I've been married for 25 yrs. and my hubby still says I don't make REAL enchiladas because they're not rolled, but he never failes to eat my flat ones with vigor! 😆

    Ingredients: tomato puree, water, chili, citric acid, locust bean gum, spices
    Price: $1.49 for 28 oz can at 99 cents only store, about $1.80 for the same can at Winco (these are stores I know are in Arizona, Nevada, Utah, not sure what other states have these stores) this is a pretty thick sauce

    Thanks for the video, Steve. I don't think I've seen the cheese wrapped in turkey tortillas before, so this is interesting to see. I wonder if a cheese stuffed jalapeño wrapped in a turkey tortilla covered in enchilada sauce would work. Quite possibly, I might have to try both ways. I usually use Las Palmas Red Chile or Enchilada Sauce if I don't have time to make it from a recipe, it's pretty decent but does have cottonseed oil.

    nice recipe video, and good to see you back in the kitchen. I've always wondered where the carb comes from in deli sliced meats (or frozen shrimp for that matter). It must be dextrose in the packaging?

      Sugar is listed in the ingredients. It could be that the chicken is brined. I was actually more surprised at the one carb per mozzarella stick.

    I haven't watched the whole video yet *but* I just had to say... It's Old El Paso sauce for me, or I'd rather make something else entirely. It's my deal breaker. There's nothing that will ever compare to it for me. My ride or die enchilada sauce. I've tried others. Vomitous by comparison. All restaurant enchiladas can go straight in the trash as far as I'm concerned. I could go on. I'm very passionate about it as you can tell. 😂
    So basically, what it means is, I don't have enchiladas anymore on keto.
    And that's okay with me, because I'd rather have it perfect or not at all.
    I used to make them with the Aldi tortillas, but after a while I decided those tortillas were giving me cravings and possibly spiking my blood sugar, though I never tested to confirm.
    BUT they were EXACTLY like the enchiladas pre keto that I know and love because of the Old el Paso. I haven't made any since I stopped using those tortillas because I haven't found a replacement I like as much (but I'm considering egg life wraps in the future).
    But if I do. It's Old el Paso. Till death do us part. 😆
    Edited to add: I make the enchiladas from the recipe on the back of the can, exactly like it. They are the best enchiladas I've ever had. Everyone I've ever served them to has agreed. My mom "passed" it down to me, and my sister.

    You need to try El Pato Salsa, great flavor, 1 carb for 1 ounce and very clean ingredients. They sell at it Walmart. A small 8 ounce can is less than a dollar

      A person could probably wrap ham and then chicken around a Swiss cheese stick, roll it in egg wash, then pork rind panko, fry it up and you've got a Tik Tok chicken cordon bleu.

    Seen other recipes where chicken is used to emulate Tex-Mex dishes. Like what you did, and I think the little extra cost for the richer sauce might be worth it.

      Agreed. Though I’ll likely do a more labor intensive enchilada recipe in the future that involves making the sauce.

    I’ve tried using turkey breast for enchiladas in the past which I liked but my husband (not keto but trying to stay fairly gluten free) thought they were slimy. I’m wondering if chicken is better or maybe if I dried off the meat first?
    I’m also curious about the crema. Is it more like thin sour cream or thinner heavy cream?

      I use dried guajillo and ancho chiles. Soak in boiling water. Purée with tomato purée and garlic cloves season to taste. Delicious.

    Just boil about 5-7 dry of chile guajillos and blend in 1-2 cups of the water you boiled with Gatling and onion. Voila keto enchilada sauce.
