Fiji National Dish: Kokoda

    Today we travel to an island in the South Pacific Ocean and try the national dish of Fiji. Its a simple recipe but requires some time commitment because you dont cook the fish with heat but with citrus juice! Its delicious and definitely worth trying if you have never had kokoda or cerviche.

    Hey ! New subscriber here. Im Fijian living in San Francisco. If its fresh fish out of the water, you dont even have to go 8 hours ... just do 4 hours - just toss the cut fish well in the lemon juice. Also drain the lemon juice from the fish after curing so its not too sour in the end. When youre using coconut cream from can, you can dilute that cream with water. equal parts.
    And be at liberty with the additions - tomatoes, onions, a lil cilantro, diced steamed brocollini, green onions, sea grapes ( a sea weed ) if you can access it .... also - like you suggested ... diced almost fully ripe mango. Yea , the right salt & pepper balance is very important.
    And lastly, even though its Fijis national dish or one of the few famous ones, its not really an full entre but more like an appetizer before the main course(s).
