How Shriver's Salt Water Taffy Is Made Using A 200-Year-Old Technique | Regional Eats

  • Salt water taffy was developed in the late 1800s by Joseph Rowling in Atlantic City. Truth is this taffy has no salt water in it, and instead got its name from its proximity to beach waters, which obviously contain salt. Stores can run about 2,000 pounds of taffy a day. The process starts with corn syrup and lots of it. Salt water taffy is worked at room temperature, a much lower temperature than hard candy. If the salt water taffy is fruit flavored, then citric acid and coloring is added. A cooling machine stretches the taffy while liquid flavor is added. Candy makers stretch the taffy to add in air. That gives the taffy a chewy consistency. Next, the batch is placed into a batch roller and turned into a cylindrical shape. It is then cut, wrapped and sealed.

Love how they all wear gloves, then the dude grabs the taffy and holds it in his arms against his chest. Every single fiber, skin flake, hair, dirt, etc that was on his shirt and arms is now in that candy.

And the TV host picked up the taffy blob in her arms and probably got a nice wax job. An episode of "Small Town Big Deals" with Jann Carl brought me here. She did the same thing, but she wasn't wearing an apron and her hair draped over the taffy. This place should be reported to the health department.

I know right. People in other countries who eat off the ground and wipe their mouths with stones would just cringe knowing that Americans might ingest a particle of a skin flake! 🙄 everything you eat came from the dirt of the ground or from inside the carcass of a creature. Hair and fibers aren’t going to kill you.

That story of the origin of salt water taffy is an urban myth from my hometown of Atlantic City.
The real story is Joseph Fralinger who founded Fralinger’s Salt Water Taffy in Atlantic City in 1882 simply made it up as a marketing tool to get tourists to think there was some extra special novelty about his product because it was made near the salt water of the Atlantic Ocean.

I get it though, it can be awkward to try to prompt people to give particular sound bites if they're not used to being interviewed. the one thing I was told the first time I got interviewed was to answer questions by rephrasing the question in the answer so that the interviewer asking the question could be cut out and the answer made sense as a statement on its own.

In the summer months, I try to keep a box in an air conditioned room or may keep in the fridge. If you keep it in the fridge, take it out at least a half hour before you eat it - take lid and paper liner cover off. Should be ok.
