Coconut Bon Bon (Madagascar BonBon Coco) | Fresh P

    INGREDIENTS
    3 cups/250g fresh shredded coconut or desiccated coconut (unsweetened)
    1 cup/200g palm sugar or white cane sugar
    1 cup/200g water
    a pinch of sea salt
    In a medium saucepan combine the water and the coconut and cook over medium heat for 10 minutes to rehydrate the coconut. Add the sugar and continue stirring until the sugar begins to caramelize. This will take between 20 and 35 minutes. If it’s getting too dry and still not caramelizing, add a teaspoon of water to it, as you continue to cook it. It will brown eventually. When your candy is medium brown remove it from the heat. While it’s hot scoop out walnut sized balls with two spoons and arrange them on a sheet of parchment paper to cool. When they are fully cool transfer them to a container with a tight fitting lid.
    If you don’t caramelize the sugar enough, the candy will be sticky and uninteresting. You want the sugar to be dark caramel in places with an overall medium brown color. These may take a little practice, but they’re so worth it. If you can get ripe fresh coconuts, shred them with a fine cheese grater or a coconut scraper (see link below) for the best results.
    NOTE: Sweetened coconut will NOT WORK. It’s covered in anti caking agents that creates a gelatinous goo. I’ve tried it and it’s gross.

    I got the recipe form Codys wife & her Mom's Dutch oven video.
    It came out great. I was out side try the dig the car out of the snow to get to town when it was ready. Will try it in the am.....

    Hi, here in Brazil we call it COCADA, made of coconut literally, and have many variations like white Cocada, brown Cocada, Cream Cocada and Tijolinhos de Cocada [Little briks of Cocada]. It's a very popular sweet here.

    I Love coconut! I wonder if these would be good with chocolate in/on them too.....or dipped in warm melted chocolate as you eat them.

    Ymmm.....and now a yummy candy, made from fresh grated coconut or dried, so that's palm sugar, i've heard about it but never tried it, ya think instead of making Coconut BonBons, brown sugar or piloncillo could be used? GP's gonna have some sweet love in his tummy, courtesy his FRESH P!! :)

      I would use Carmelites white sugar because brown or pilloncillo would overpower the coco. But if you try it please let me know.

      I've been weeding it out of my diet for the past couple of years. I like to do month or two month stints w/o any processed sugar in my diet. Primarily because it's death to the body, but on a more personal level it's inflammatory. I have hip dysplasia, it's genetic. Well the past 6 or 7 weeks the femroacetabular impingement has prevented me from walking more than a couple blocks. I have been off the sugar and white flour for the better part of 2 years (since diagnosis). I threw the diet out the window in Baja and was eating ice cream daily and eating out regularly. It took 7 weeks for me to realize how bad it's become. If I don't eat well, I can't walk. And maybe it's progressed to this point and has nothing to do with diet, but I'm not going backwards that's for sure. I walked maybe a mile today testing various femur rotation exercises to see if I could eliminate the pinching, after that I couldn't walk anymore. So I'm back on my usual plant food diet now. I can ride my bike w/o pain and surf, thankfully, but I miss walking.

      Sugar is white poison I feel better that I have cut out 90% of the sugar in my diet. I can't touch ice cream it makes me really ill. I have cut out white flour except when I make pancakes but that is once a month at the most. I don't like the taste of white bread anymore used to eat loaves of it. A friend of mine she has arthritis she's gone completely vegetarian she is same age as you. She is trying natural remedies the medications to treat what she has makes her ill. When they say you are what you eat it is true, start binging on the bad stuff it comes back to haunt you. I'm finding that now that I have cleaned up my act I can't eat the stuff I used to eat. I will pay for it if I eat sugar, I will also pay for it if I have caffeine which is in the Tylenol I take when I get a bad headache. The coconut oil pills are helping the problems I used to get with my knees, it is mainly with my sciatica and lower back pain. I just got back into powerwalking again I spent a month and half run down had a cold that wouldn't go away plus I had other things giving me stress in my life. Get your diet back on track you should be good to go.

One thing we'd like to know, because we need to transport a large amount of them... when they cool do they harden? Or do we risk having a big clump of stickiness when we arrive at our event?
