    💬 Today I am showing you how I made those delicious coconut candies (known in Brazil as Bala Baiana or Bala de Vidro). The other day I made them for the first time and posted it on Tiktok and everyone went crazy about it (how could you not?! they are - indeed - amazing!) so I thought I would make them again and show you the whole process of how I made them!
    Disclaimer: this recipe is obviously not mine - it has been around for a long time and has a different name in different countries. I am just sharing how I made them, and how it worked for me!

    🧑‍🍳 If you need the ingredients and measurements, here you go:
    👉 COCONUT KISSES:
    1 CAN OF CONDENSED MILK - 14oz
    1 TBSP OF UNSALTED BUTTER
    3-4oz OF UNSWEETENED COCONUT FLAKES (this will be to your liking, can add more or less, or even skip it)
    👉 SUGAR COATING:
    1 CUP OF SUGAR
    1/2 CUP OF WATER
    1 TBSP OF WHITE VINEGAR
    RECIPE:
    COCONUT KISSES (Beijinho de Côco):
    In a pan, mix 1 can of condensed milk (14oz),
    1 tbsp of unsalted butter and about 3-4oz of unsweetened coconut flakes. Cook it on medium heat, stirring it constantly until the mixture reduces and is not sticking to the pan. Put the mixture on a greased plate and let it cool. With greased hands, make it into balls (about 1tbsp of mixture for each ball).
    SUGAR COATING:
    In a pan, mix 1 cup of white sugar, 1/2 cup of water and 1 tbsp of white vinegar. Stir well, then cook on high heat (without stirring) until it turns into an amber/honey color (this should take about 12-15minutes). Watch it at all times. As soon as it turns amber color, turn the off and dip each ball into the caramel. Place them on a plate and let them cool. Work fast so that you are done before the caramel hardens or burns. The caramel is super hot, so be careful!
    Store it in airtight container.
    No refrigerator (it makes the sugar sticky).

    the vinegar is an acid, you can also use lemon juice. the acid helps the caramel from crystalizing

    I just made these. It came out great. I added some cinnamon and nutmeg to the Condense milk and coconut to add a little extra spice flavor . I didnt dip the whole ball into the sugar at the end because when it get hard it's like biting a lollipop and I like all my teeth lol . Instead I drizzled a little on top to still give it a crunch . 😋

    I made them with brown sugar. ^_^ They taste so good and can be eaten just like that without the coating. It tastes like Puerto Rican dulce de coco.

    Use a candy thermometer- caramel should reach hard crack stage at 300 - 310 degrees F, gives a more consistent coating on all of the candies

    I’ve been seeing this EVERYWHERE and finally made them. THANK GOD THE SUGAR COAT WAS SO HART TO GET THROUGH. Because I ended up eating all the messed up ones (the whole batch) just like that. If it was easy I’d be making these WAY too often

    Nope couldn’t make the hardy candy part - kept being clear in the middle and amber on the outside then suddenly went burnt and set all the fire alarms off 😂 so i melted chocolate and dipped the balls into that and now have home made bounty bites 😍

      Your burner isn't evenly heating then. If you have the old fashioned coils like I do, it's a challenge. I ended up making this at my aunt's house, on her glass top stove, and it worked like a charm.

      Ohhh you will soooooo love this!!! Be ready to have a new addiction! 😩🤤🤭 my can is 14oz! This candy is also amazing with just the filling itself! Take a little taste when making the little balls! 😝 In Brazil, without the sugar coating it is called “Beijinho de Coco”, people normally eat either just with a spoon or roll the balls onto some of the coconut flakes! And with the sugar coating like I showed in the video it is called Bala Baiana, or Bala de Vidro! SO SO YUMMY! 😍 I hope you love it! And thank you for watching and leaving a comment! ❤️

      Yes! Leave it outside! Inside the fridge it gets sticky. Ive never been able to have them for more than 3 days 😂 we eat them all fast! But they should be good for a while!

    I just made them and my sugar was that color and the ball it made in the water that I tested firmed a hard ball. But it still came out chewy 😭😭😭. But it was still good lol

    I made these today, and here are my observations:
    1. DELICIOUS!!!!! I didn't think the crackle would make a difference in these. I thought it was just kind of for effect, but boy, was I wrong! It really added to how good this was!! And the coating wasn't hard on my teeth. It's a thin layer that you can crush with your fingers. Not hard on my teeth AT ALL.
    2. I will use unsweetened coconut next time.
    3. The sugar crackle - use a candy thermometer if you're not sure, and DO NOT go by time. Your oven and even the kind of pan you use will affect the speed at which it comes to a boil. Mine was ready in about 5 minutes. Also, it will continue to cook even after you take it off the heat, so work in small batches with the bonbons. Once it gets slightly beyond that initial golden color, you'll end up with a burned taste. It happens so fast. I got through about 6 or 8 bonbons before it got darker and tasted slightly burnt. I still ate it, and it was ok, but not as good as the first few. It's better to make a bunch of balls, pop them in the fridge and work with just a few at a time, making more of the crackle as you go.
    I'm about to try it without coconut next, just so I can see if it will work.

    Could you please type the recipe for me? I have a hard time hearing. In your TH-cam short, my neighbor said that you said that cream could be added in on the first part. Could you please explain? Also, my neighbor said that the send part called for 1 cup of sugar but she said that you mentioned 2 cups of sugar. Again, please explain. Thank you so very much!       Hey! Absolutely!
      👉 About the heavy cream: on this video I mention that if you make it and it is too sweet for you, you can add a little bit of heavy cream to it - about 5-8oz. If you do add, it will just take a little longer to get the mixture to the thick consistency you need to roll it into balls. The taste should be super similar, just a bit less sweet.
      👉 As for the sugar, on the short I explained that the first time I used 2 cups of sugar to make the caramel coating and I had too much left over so I started using only 1 cup and that was the perfect amount!
      👉 Now on to the recipe! 😍

    I was very nervous making the sugar coating the smell of the vinegar was what I smelled the most while it was boiling and what seemed like forever to get the amber color was definitely worth the wait. 😂

      I will try it with hazelnut or almonds. I like coconut but I don’t always like the consistency so I will try these two 😊

    How long do I keep in the freezer before but the sugar coat

      I leave it for about 10min just to get it cool enough to roll them into balls. You can also let it cool out of the freezer but it takes way longer

      Some people have been using nuts! You can also use chocolate powder (basically make brigadeiros). About 2 tbsp

    after the coating is ready did you turn it off? i didnt and my sugar started burning before i got done

      Yes. I suggest turning off and work fast. It helps to have someone throwing in the balls and you coat and remove them (or vice-versa)

    I tried making those 2 times and each time I couldn’t get the consistency you have, and it’s always still sticking to the pan, do you have an idea why ??

      Make sure to add 1 tbsp of butter and to be constantly stirring. Put the heat on medium to high - I normally put it more towards high.

      The coconut one yes, use pam or butter on your hands to help. The final sugar costed balls no. It should be dry

    I tried these and I think I did something wrong. They are delicious but the coating is very sticky and could pull a filling out. Any suggestions?

      Maybe it wasn’t ready yet. Try to stop a tiny bit of it on a cup of water. It should be ready when it crystallizes once dropped in water. Also, I find that if you store it in the refrigerator it gets sticky.

    I made them and they were a huge hit.....The only problem I had was when i put them on pam spayed paper plate they still stuck to the plate and I had to pull they off with a fork😒

    I think I waited too long. My first 2 came out lighter and it quickly turned super dark so some of them are dark brown. Haven't tried them yet but I'm worried about the dark ones.

    Didn't come out the same as in the video 😩. When melting butter and condensed milk, brown particles appeared even when stirring constantly. Then when dipped the balls in the syrup, they'd break apart inside the pan 😣

      To clean the pot just fill it up with water and let it boil. Then just wash normally. Or, you can also just let it soak in water for some time. ❤️
