From a different point of view, everyone is a craftsman.
This is a documentary that changes the perspective of everyday life.
Mori, an okonomiyaki restaurant, is located in Fujimi-cho, Naka-ku, about 10 minutes from downtown Hiroshima by walking across Peace Boulevard.
Two years ago, Mr. Nakamoto from the select shop ref., who helped me with my photo exhibition, took me there, and I started going there every time I returned to Hiroshima.
"Mori" was started 60 years ago by the owner, Mrs. Matsuoka's grandmother, and Mrs. Matsuoka is the third generation.
When you pass through the store's purple noren, you can see the Carp Boy's floor mats. The people of Hiroshima Prefecture have a strong sense of trust in the store there. There is an iron plate in the middle of the shop, there are 5 counter seats and 1 table seat, and posters of professional wrestling, which is Mrs. Matsuoka's hobby, and a calendar of golf are pasted on the wall. The shop is old but well organized and comfortable.
Immediately after Mrs. Matsuoka took over Mori, she struggled for about three years with customers comparing the flavors of her predecessors and pressure to protect the restaurant. She says that during those three years, she spent every day pursuing her own taste and personality.
One day, a customer told Mrs. Matsuoka that the okonomiyaki made by her was "wow!" When she thought that she should make okonomiyaki for people who said that her okonomiyaki was delicious, her mood cleared up and the shop started to run smoothly. From then on, she began to think that cooking okonomiyaki was fun and enjoyable and her vocation.
This year is the 18th year since she started cooking okonomiyaki, and she has made her own original noodles, sold frozen okonomiyaki, and developed sauces.
Her son, who was in Tokyo, came back this year and decided to take over the restaurant. Hearing this, I was so happy for that when I came back to Hiroshima, I would be able to eat delicious okonomiyaki for the time being.
Mrs. Matsuoka's okonomiyaki is carefully made.
In the morning, remove the bean sprouts soaked in water from the previous day.It starts with removing the mustaches one by one. Cut the shredded cabbage evenly. I was surprised that the sound of cutting cabbage played the same rhythm.
After cutting the green onions, she made the dough, and her son and she were working together, so there was no waste. Work progresses at breakneck speed.
"I don't like waste," she said as she kneaded the dough.
At 11:00, the phone continues to ring and orders flood in. The speed at which Mrs. Matsuoka takes orders and starts grilling is about twice as fast as when she was cutting vegetables. Up to 8 pieces of okonomiyaki are grilled one after another on the iron plate.
The noodles are steamed, the batter is pulled, and cabbage, bean sprouts, green onions, tempura bits, pork, and squid tempura are placed on top of the batter. In no time at all, the egg is grilled, placed on top of the okonomiyaki, covered with sauce, and sprinkled with green seaweed to complete the dish. Just imagining it in my head makes me drool.
And once you eat it, it becomes addictive.
When I asked Mrs. Matsuoka, "Isn't there some strange powder in it?""Magic powder"said by her with laugh.
When you go to Hiroshima, please try the okonomiyaki "Mori". Definitely addictive.
