Just made these today, and paired them with a bowl of your lentil soup recipe as well. It was a perfect winter meal. (and also was really great for working at home--although they take some time, it's very little active time. It was really easy to get the liver marinating, then go work. Get the lentils cooking, then go work. When it was time to eat, the meal came together very quickly.) Thanks a ton :D
Hi I fell in love with with your channel, I'm myself Egyptian an I've learned never to wash liver with water, water makes it stink it will get "zifir" try it out you will see /smell and taste the difference. And in fact when cooking any kind of meat you always need to make sure its dry so you can get the perfect crust. This was one of the my first lessons in the kitchen. I wish you all the best for 2021 and please keep on doing your great tutorials you make me remember old recipes that I love!

From Alexandrian Thanks for sharing our recipe My Ti is don't add black paper to the liver it's not bad but cumin and Coriander and salt and garlic with oil and green paper are the main ingredients

You asked for an easier way to peel garlic. I put the entire garlic in after I have separated it somewhat into the food processor with the dough blade, not the cutting blade. Then I run it until it looks like most of the heads are clean or nearly clean. Then dump it onto the counter and do the last bit of separation. It eliminates the smashing step. Then I switch out the blade in the food processor and chop all the garlic into the size that I want. Then to make it easy to get out of the bowl I just run water in with the garlic and pour it into a fine mesh strainer and let it drain a little sometimes shaking the strainer to get all of the water out.

Well good thing is, it's really quick to make and super delicious. If you can get your hands on some soft bread rolls and some liver then you are good to go!
I'm American in Cairo i just go to the street vendor and get mine. I tried to cook liver at home i can't stand the smell. I get mine with tahina sauce in it
I ate this in Egypt I loved it had two, cooked it at home and I dry reach, I think it was not fresh and I overcooked but texture and taste was discusting where as in Egypt I couldn't taste it and it was nice texture Think cause my garlic was from jar as well
Some recipes call for vinegar, others don't. I find it gives the liver a better flavour. We've always served it with Tahina at my Mother in laws house.
@@MiddleEats Usually those who eat it with tehina are the people from Cairo..in Alexandria people dont add tehina to the sandwich in some cases it can be surved with extra tehina plate

2-3 Tablespoons is enough. Yeah it works for any beef or lamb liver recipe, it really helps remove the funk.

I am from Alexandria and that's not the original Alexandrian liver recipe.. there is neither tehina or veinger is added you Alexandrian Liver
