Kristie's Southern Style Pimento Cheese

  • Kristie’s Southern Style Pimento Cheese
    1 cup plus 1 tablespoon of mayonnaise (link to my favorite brand here: amzn.to/28Lbnrk
    2 ounces of cream cheese, softened to room temperature
    16 ounces of shredded cheese (two different cheddars work well as explained in video)
    2 to 3 tablespoons of diced pimentos
    1 tablespoon Worcestershire
    ¼ tsp garlic powder
    ¼ tsp cayenne powder or more to taste
    4 to 5 tablespoons bacon pieces
    Mix mayonnaise and cream cheese until well blended. Add mayo mixture to the shredded cheese and mix well. Add Worcestershire, garlic powder, cayenne, and bacon and blend well. Refrigerate for an hour or more before eating. Enjoy with a spoon, on celery, or pepperoni chips. This is delicious baked and hot and gooey and on burgers.

    Strange the small amount of pimento in it. Seemingly the key ingredient. Another diversion of pimentio cheese, this is cheese SPREAD!

    It is not a salad. It's a cheese spread. It's dead simple to make. Measuring is a waste of time, just taste as you go. Add whatever you want, it's almost impossible to do it wrong.
    Edit: I spoke too soon. She did it wrong. Only a tablespoon of pimento?!?

    You have made my Summer 99% complete with this recipe. I grew up with pimento cheese made with Velveeta & lots of sugar. It took a while to get used to eating it made with cheddar cheese. I agree that the best way to eat pimento cheese is with a spoon...lol I have never had bacon in pimento cheese but I will now! yum yum Thanks Kristie.

    I'm really looking forward to making this pimento cheese. I grew up eating it, and have missed the flavor. The store bought oneshave terrible ingredients that are not necessary. I make my own mayo with half avocado oil (cheap at BJ's) and half lite olive oil.

    Oh gosh, great memories from this. my grandmother used to laugh at the amount of pimento cheese I could put away. I loved it even for breakfast. I can't wait to try this. Thank you for sharing another great recipe with us. xo

    I would mix all the spices, cream cheese, bacon and pimento into the mayo before adding the grated cheese. Great recipe, good lead on the mayo. I put it in my shopping cart at amazon. I am also getting some sweet leaf stevia drops and packets. I really like the SL stevia drops with the chocolate flavour. I have a hard time drinking plain water and 3 or 4 drops in glass with ice water really makes it much better.

    Looks so good and I can only imagine the taste. I was able to find the mayo at my Publix and it was cheaper than Amazon. However, still expensive! A question, do you have other recipes for using pork skins?

      wow! Publix! had no idea they carried it. I use pork rinds as a breading for meats and I use it as bread crumbs in my squash casserole recipe. the milder flavor is perfect for that. I also use the keDorito seasoning on them and am wildly addicted to it.

    I'm not a fan of pimientos, so I sub in chopped sun-dried tomatoes. Super yummy on a bunless burger! There aren't too many tomatoes in a serving, which is a plus on the keto WOE.

    love pimento cheese here in SC! i've been TRYING to go keto for a few months & apparently i'm doing something wrong...sigh...
    BUT, i do all of the cooking for a household of 4 adults, and they're all "along for the ride" - i'm going to drop back to LC for the summer [too much travel, etc.] and try keto again in the fall.

    I just made this pimento cheese and I think I died and went to heaven! Lol!
    I have eaten a ton of this stuff over the years (here in southern Ohio) and this is sooo much better than any I've ever had!
    The flavor tastes just like a cheese ball I make at Christmas!
    I had to leave out the bacon because I didn't have any cooked, so I'm anxious to try it that way too!

    I eat pimiento cheese. It is good. I think the variety that uses cream cheese is called Palmetto cheese.

    I had never heard of this dish before, but decided to try it after watching this video. I had no pimento so I just made it without and adjusted it with what I had and like of spices. (My cooking is a bit like yours... no recipe can tell me how to cook :D ) And I LOVED it. Thank you so much! I'll look for proper peppers at the grocery store next time.     Wow, thanks for this. Just curious because Southern pimento cheese I usually bought before Keto is really orange, wondering what gives the orange coloring? By the way, years ago living in NY City, I sent a kid (not my own) to the corner store to buy me some pimento cheese, he came back because the store owner told him to ask me what it was and what you did with it. At that time I had no idea it was a Southern dish.

    I'm so excited I watched this today. Burgers in the grill Mon by I've never thought of putting a dollops on top. I'm going to do just that for a special treat. ENJOY-CE a safe weekend.     This Southern Boy loves Pimento Cheese. If you buy it the best commercial brand is Palmetto Cheese!

      Palmetto cheese is good -- no sugar like a lot of the commercial brands -- but it is kind of expensive. It's more economical to make this lovely stuff at home.

    Kristie, Thank you so much for your sharing your keto journey and your recipes! I know I am a year late on this, but I wanted to give you a gift of a wonderful mayonnaise recipe that I have developed through much trial and error.
    Ann's Mayo
    I use an immersion blender and the tube container it comes with. I suppose a food processor would work.
    It is a good idea to bring the ingredients to room temperature, but I don't always have the time!
    Put in the container: 1 raw whole egg; 1 raw egg yolk (A health warning is always associated with the use of raw egg products.)
    Add to taste: 2 T or so lemon juice (I use 2 T, but you might start lower and work up! For a change, you might try champagne vinegar)
    Dash of citric acid (probably 1/8 to 1/4 t, it adds a lot to the recipe and acts as a preservative-Walmart or any grocery store in the canning section or Amazon)
    Dijon mustard, 2t (more or less) Grey Poupon Mild and Creamy Dijon Mustard
    Dash of Sukrin Powdered Sugar (¼ to ½ t or to taste)
    Salt--needs a good bit of Salt!
    Then add: 2/3 cup of avocado oil (can try light olive oil which doesn't have much taste and is much cheaper)Optional: 2 t chia seeds (This makes for perfect consistency; but, honestly, for some reason, the chia seeds stay a tiny bit crunchy. This doesn't bother me at all, but some people might not like it.)
    (The eggs will thicken 3/4 c avocado oil, but then you have to up the other ingredients.)
    Go to blending, probably takes about 2 minutes, don't rush it. Refrigerate. Without the chia seeds, it will not be as thick as store bought. I don't keep this past 7 days. Hope you see this a year late and enjoy!Ann
