Your recipe looks delicious! I would love it the way you prepared it. My wife and mother in law, however, would likely not be as enthusiastic. I do most all the cooking now at this stage of our 38 years of marriage. They have grown very accustomed to the way I've always prepared it. My wife likes the saurkraut rinsed at the beginning because she says the fermentation flavor is too strong. I always drain off the juice and add it back to my servings and we're both happy. And while they both liked browned meat, they would consider the sausage burnt if I served it with charring. And I typically serve it with a fair amount of the broth left in the pot and we eat it almost like a soup. Also, I like to add a small jar of drained chopped or sliced pimentos or roasted red peppers near the end of cooking for a sweet note every few bites plus attractive color. I think I'll compromise. When I prepare it for supper tonight, I will first brown the sausage and will char the last pieces a bit darker for myself. The rest I'll do my usual way except I'll add the ingredients into the same pot to deglaze and capture that great browned flavor from the bottom. I make great bierocks. Ground beef, cabbage and sauerkraut baked in a fresh roll. Totally Kansas German thing. In Nebraska they're called Runzas. Google them and maybe you can give bierocks a try.
So glad you gave detailed instructions about removing the sausage from the package, whew! One of my favorite meals. I bake mine with potatoes, cabbage, carrots, onions and garlic. I will try it on the stove though! 👍🏻

I layer from side to side , well browned sausage , thin sliced yams , then sauerkraut with caraway seeds . Great dish for a cold night with a rustic bread
If the cook ever see's my comment, when you get to the step of adding sauerkraut i want you to add 1 chopped yellow onion and add a can of Canada Dry Ginger ale cover and steam until the canada dry caramelizes the bottom of the pan mix it up and serve with mash potatoes. 👽👽👽 (The Ginger ale will turn that flavor everyone hates from sauerkraut into a fucking masterpiece YW)
