How to Cook Beef Mechado: A Cozy Filipino Stew You’ll Love!

Its stewing seasons and today, we’re making a traditional Filipino stew called Beef Mechado.
Made with tender beef, simmered in a rich tomato-based sauce infused with garlic, bay, and aromatics, creating a hearty and flavorful dish.
This easy one pot stew perfect for a cozy winter meal.

Ingredients
1 1/2 lbs beef chuck
Juice of half a lime
3 tablespoons canola oil
6 cloves garlic, minced or crushed
1/2 cup onion, diced
1/2 cup diced carrots
1 tablespoon fish sauce
1 tablespoon tomato paste
1 tablespoon Worcestershire sauce
800ml (27 oz) crushed tomato
5 bay leaves
1 red bell pepper, sliced
1 cup yellow potato, cut into chunks
1 cup carrot chunks
Kosher salt
Freshly ground black pepper
Cilantro or green onion (optional)
Here’s how to make a delicious mechado beef stew:
Step 1: Preheat your oven to 300°F. Season both sides of the beef with kosher salt.
Step 2: Get your veggies and aromatics ready. Put minced garlic, bay leaves, diced onion, diced carrots, sliced bell pepper, and potato chunks in small bowls.
Step 3: Heat some canola oil in a Dutch oven over medium-high heat until it starts to smoke. Sear the beef on both sides until it’s golden brown. Don’t rush this step - you want to hear a nice sizzle.
Step 4: Add the minced garlic and bay leaves to the pot. Sauté for 30 seconds until they smell amazing.
Step 5: Throw in the diced onion and diced carrots. Cook until they start to soften.
Step 6: Sprinkle in the tomato paste and a pinch of salt. Sauté until it turns brown.
Step 7: Pour in the crushed tomatoes and bring the whole thing to a simmer.
Step 8: Slice the seared beef into chunks and put them back in the pot. Cover it partially with the lid and pop it into the oven for 2 hours.
Step 9: After 2 hours, add the potato and carrot chunks to the pot. Return it to the oven and cook for another 40 minutes.
Step 10: Finish it off by adding the sliced bell pepper and cooking for another 20 minutes.
Step 11: Season the stew with fish sauce and Worcestershire sauce for a bit of extra flavor. Add a splash of lime juice for a zing.
Step 12: Serve the stew with some rice and garnish with chopped cilantro or sliced green onion, if you like.
