Purchased half a cow recently. Organ meat came in the package. I was hesitant to eat the cow tongue. Never had it nor cooked it before. I used your recipe and it was sooooo delicious! I also saved the broth from the tongue to use for later. Now I am excited to try cow heart. Do you have a recipe for this? 4:53
The lengua is so rich and flavorful, savory I find that adding something super fresh and citrusy counteracts beautifully. Cilantro seems like it was created by God to go with lengua!

Excuse me but, did I miss the part where you rinse the tongue after you've unpackaged it, then wash it clean, then soak it in water, vinegar, and salt for 10 mins before you put it into the pot for boiling?
I personally don't like the texture when it's chopped I always preffered shredded. That's what I grew up with tho. No hate just wanted to throw that alternative out there.

I think boiling it too long makes it flavorless all the flavor is in the pot I would've made beef soup
It's braising. Usually you wanna reduce your braising liquid down add flour and make a sauce or gravy. Pour it over pasta or whatever you want.
