      Good tortilla presses are invaluable! Even the good ones need a bit of testing to figure out what weight & positioning gets you the best results. I line mine with a ziploc bag for zero sticking. Cut the zipper part off, then cut down the two side seams so you’re left with a U-shaped piece. Place the dough inside the bag, then use the press as normal. After a “don’t squish your fingers” reminder, the kiddos can make the tortillas & pass them off to the adults for filling/cooking.

    The tortilla press isn't much of a gadget, it's actually used in a lot of traditional Mexican restaurants and even homes! The trick is to use baking paper between the ball and the press, though for best results it has to be a quite heavy one. Traditional tortillas also aren't all that thin so it's usually not a problem if they're not perfectly rolled out.

      A dysfunctional family is a family in which conflict, misbehavior, and often child neglect or abuse on the part of individual parents occur continuously and regularly, leading other members to accommodate such actions.
      Here are five types of dysfunctional families:
      - The Substance Abuse Family.
      When one or more parents abuse drugs or alcohol.
      - The Conflict-Driven Family.
      When family members are constantly picking fights or pressing each other's buttons to retaliate. For example, when one member feels threatened they may retaliate with even more hateful actions.
      - The Violent Family.
      When the children are exposed to some form of physical violence in the home.
      - The Authoritarian Family.
      When the parents act like dictators making great demands but giving very little positive feedback. With a family environment where your mistakes are met with severe punishment.

    Hi! I am from Mexico, where tortilla presses are very common. As someone said below, the trick is to use a thin film of material to avoid the dough sticking to the surfaces of the press. In Mexico, we use plastic bags most of the time (not baking paper, which is more expensive). Once the tortilla is flattened, the plastic is peeled off and on to the cooking griddle (comal). One of the reasons tortilla presses are so useful is because maize dough is not elastic, and thus difficult to roll out using a pin.

      Just so you know, there are two kinds of subtitles: 1) write exactly what was said or 2) write exactly the meaning of what was said at the speed of the scene. Both are correct, but type 2 is generally considered "better" because it allows the reader to keep up and to get nuance that may be lost (certain idioms deaf people won't understand might be changed, etc). Type 1 are more common on the internet and definitely better for learning a language.

If a character says, "that went over like a belch in church," and why belching in church is something you would have to think through because intrusive noises are something you don't experience, replacing it with "that went over like a nudist in church," would theoretically be a better watching experience.

    • @bronwynsteck
      @bronwynsteck ปีที่แล้ว +11

      Put your eggs in cold water and then start heating the water, and you don't need to pierce the shells. I boil eggs often and I hardly ever have one crack. The eggs only crack if they heat up too fast, because a quick rise in temperature causes the pressure to build up too quickly. Also, keeping them in the fridge will make them more likely to crack, because they go from very cold to hot too quickly.

The freedom I felt to interpret sayings or word-jokes and make them work for everyone or snappy comments and accents that don't easily transfer into my language... it was a freedom I wouldn't have in a real translating-job. I liked the celebrities in the show that I translated and I felt I 'knew' their manners and could imagine what words they would (and wouldn't) use if they spoke Dutch. The first electric industrial tortilla press (using rollers) dates back to 1904 or 1911 depending who you ask. Having said that, my mom never used them (rolling pin baby) but we still had an old one kicking around the house.

    The cheese curler DOES work, I have this at home. And the cheese is delicious! But, as you already guessed it, Gruyere is not the type of cheese to use with it, but there are others (like 'Cinderella' or 'Milchzapfen').
    For the chocolate to work, I assume even the tempered chocolate was to hard, it needs to be softer.
    never had it for myself, but I found the ingredients list on a official product for this curler: (Sugar, cocoa butter, whole milk powder, cocoa mass, canned butter, milk sugar, emulsifier (soya lecithin), natural flavor (vanilla))
    I wish I could send one of these cheese not only for you to see this working, but for Dave to finally enjoy something good on this channel, after having to try all these sometimes more than questionable recipe on our amusement!

    The tortilla gadget is also used in India, like in a lot of households, for making a small, fried flatbread called "Puri". It works amazingly with small amounts of dough, and is usually easier than rolling out individual small dough pieces. I can confirm as I'm Indian and my mum has this XDD

  • @marmotarchivist
    @marmotarchivist ปีที่แล้ว +262

    I have used the cheese curler before and it is as you said in the video, the Gruyère has a different consistency, so you really need the Tête de Moine to get those perfect delicate flower shapes. But even as a Swiss person, I think the gadget while working flawlessly, has such a narrow and specific purpose. They are mostly used by dairies for producing cheese flowers to decorate the cheese boards they sell. Fun fact, Tête de Moine is actually French, as it is produced in the French speaking part of Switzerland and means “Monk’s head”, because the shaved top part of the cheese resembles the shaved head of a monk. The gadget will also produce perfect chocolate flowers, but like with the cheese, you need to use the specific chocolate-wheel they sell, otherwise it won’t work.

    • @swisski
      @swisski ปีที่แล้ว +11

      Tête-de-moine is a 800 year old Swiss cheese, originally made by the monks of Bellelay Abbey, in the mountains of the Bernese Jura, near lake Neuchâtel. It has a A.O.P which clearly defines and protects the origins of this cheese, and just because the cheesemakers speak French, does not in turn make this a French cheese. Peas and Lovage

    Tortilla presses are mostly used for corn tortillas because the nixtamalized corn has no gluten and doesn't spring back. They're flattened between 2 sheets of polythene normally (I use greaseproof) and they should be thicker than a wheat wrap. They really come in handy when you're making batches of them as they're all the same thickness, perfectly round, and you can really bang them out.

    Egg piercers work just fine. You have to gently but firmly hold the egg and press it down onto the spike. The contraption is designed to keep your egg in place over the spike and has a spring to get the spike out again without breaking the egg.
    It's a pretty common thing in German kitchens. Though I agree it's not really necessary, I like my Sunday breakfast eggs to look pretty (aka unbroken) and piercing the egg increases the odds quite a bit.

    For draining pasta without a colander, I'd usually take the lid of the pot, slide it so there's just a slight opening, and pour off the water through that. Unless you're doing spaghetti or similar thin pasta, it works perfectly well, and is super easy. (Hold the lid with a kitchen towel to not burn yourself, and pour it towards you rather than away from you to make it easier to handle.)

    The tortilla maker is pretty much a traditional one. The thing to do is place plastic wrap on the bottom and top pieces of the machine, then your tortillas won't stick. Then you get a ball of dough, and place it in the center and THEN flatten it. It has to be in the center, and you must press it down hard, or squish it down a bit/few times (like a small bounce.) It is used in Mexico and other South and central American countries all the time to make the Tortilla's.

    For the tortilla press you are supposed to put two layers of plastic between the dough and the press, so it doesn't stick, and masa works best because it's not stretchy like flour dough is. you take the dough out and peel the plastic of the tortilla (not the tortilla from the plastic). It's a really useful gadget, I use mine all the time to make tortillas from Maseca.

    Tete de Moine has a much different texture than Gruyere. It's quite hard and dense and is very, very pungent. Best eaten in small quantities. The cylindrical scraper is perfect for making thin, consistent shavings of this very special cheese.

    HOH & adhd canadian here. Dave does the captions, right? Dave, if you're reading this, I love you. The emojis make it so much fun. Everything is so good & I don't think I've ever encountered a mistake that impacts the understanding, if any mistakes at all. It makes me so happy.
    Edit: yes apparently dave does make the subtitles. Love the easter egg one too lol.

    I'm from Costa Rica and we use similar tortilla pressers, for flour tortillas with cheese on them. You spread them, using nonstick paper on both sides and them throw them into a grill, pan or whatever. I was quite surprised to hear yours was that expensive, since in here they're quite old and traditional, so you can buy them at any market for as low as $4 (rough conversion from Costa Rican colones). They usualy have a different handle too, so when pressed they apply the force right on the middle. Great video as always, it was nice to see something I recognize for once not being too knowledgeable on kitchen stuff myself

      Very interesting ... yes they're not at all common here in Australia, which is probably why they charged quite a lot for it. I don't think mine was great quality though.

    Hey guys!
    Yes, the girolle (the cheese curler) is specifically created for Tête de moine („monk's head“), a Swiss cheese. It also works the best with that cheese. Gruyere has some similarities but they are very different. I recommend trying Tête de moine if you manage to find it. It is a wonderful cheese. An it shows its flavours only when shaven with a girolle. Don‘t try it by cutting it into pieces!

    That tortilla press would probably work if the lever was applying the pressure to the middle of the circle. In that form it's pretty useless.
    A lovely and warm video as usual. And great banter between the two of you!

    I have a version of the silicone colander replacement, and I think it’s brilliant. I haven’t had use for my old, metal colander since getting it. You do have to be a bit careful not to fling pasta into the sink, but otherwise, it’s 100% clever.

    • @squishyAO3
      @squishyAO3 ปีที่แล้ว

      @@freethebirds3578 I don't see why not. The one I have at least should work for that as the drainage holes are pretty small. The only thing I could really see being a potential problem is how well/securely it would clip on to whatever pan you used to cook the meat - the curve etc.

      @@nialdean I think I bought mine from the dreaded Wish, and it was a few years ago now... However, if you search for a clip on silicone strainer, you should find what you're looking for.

      @@freethebirds3578 Depending on how much fat is produced by the beef, I usually just take some paper towels and hold them with some tongs to soak up the fat and then just drop it in the garbage. If it's too much for the paper towels, then I drain it.

    couple things about the tortilla press I haven't seen in the comments yet! I'm a Mexican from the Southwestern US, so I don't blame you for being a bit unaware considering you're from Australia! As others have said, it is only for corn tortillas and you should use parchment paper or even a plastic liner similar to Ziploc bag texture on both sides, especially when using it at home. They are integral parts of a Latino kitchen and full of huge memories for most Mexicans! Flour tortillas are traditionally just rolled out with a rolling pin or rod in Mexico too! Because corn tortillas are usually rather small (think around street taco size), the tortilla press presses the dough into a pretty small circle, usually leaving plenty of space on the sides. You really only need light pressure too!
    More interestingly, I can speculate on the quality of your press! Even in the US, there is a huge industry of faulty and low quality tortilla presses, or other Mexican cooking tools, that companies sell to profit off of unaware Americans! I'm sure the problem exists all over the world (aka Australia too!) Most Mexican-Americans (even those who were born and raised in the US like me!) know that the best way to get a GOOD tortilla press is to drive down into Mexico or ensure it is stamped with a "made in Mexico." A couple signs to look for in a good press are that they should be quite heavy, sturdy, and the best ones I've seen are made of cast iron. The biggest red flag is that you said the press cost 34 AUS! I don't think that would be expensive enough, especially considering how far away Mexico is, to make it a nicer one. Every Mexican press my family has every bought is usually stamped with brands or words, which I don't see on yours! Again, I don't expect everyone to have this information and much of it is out of your control! If you ever did try again with corn tortillas, you might not have amazing results because of some of these other factors, but it will for sure get the job done! I enjoy your videos very much!

    Latinos use tortilla presses very effectively. It helps to use wax paper or parchment to help unstick the tortilla after it is pressed.
