I have found this recipe to be perfect just the way it is. I cook the elbow pasta in my microwave, in a large round glass Pyrex bowl that fits in the microwave. I add water and salt to the pasta until there's water two inches above the pasta. It cooks perfectly in 20 minutes, though I give it a stir every 5 minutes.
I had to come on here 6 years after this video was made (it is 5/8/2022) just to say that I was in desperate need for a good macaroni recipe. I have followed other recipes and they just came out dry and heavy. So I was a little Leary to try yet another recipe that I found on social media. I searched TH-cam and this recipe was the first to pop up. I liked the ingredients and I liked that the TH-camr explained in detail how to make this. I followed it to a T but it was a big party and I had to make it for 60 people so I simply doubled the ingredients. I have to say this macaroni was an absolute hit. I made 2.5 lbs of this macaroni salad and it was all gone! My picky daughter loved it, and some of the women were asking me for the recipe but I didnt want to give out my secret! Haha. Love loved this macaroni recipe. Hands down it will not disappoint. I promise!
I looked at two other videos and they use milk in dressing. this one did not. Just give them the recipe. You're not going to make a restaurant or sell it.
I'm with you but it's another year and change later (4/19/2024), I just needed a good macaroni salad recipe! I recently had a coleslaw recipe, and it made me crave macaroni salad. I could not believe my eyes, the liquid portion of this macaroni recipe is 95% exactly my coleslaw liquid in nearly identical proportions, I even add the onion and carrot to the liquid first for easy mixing. He uses a tad more sugar and salt than the coleslaw. Anyway I can't wait to try this, I'm making it in a few minutes for dinner, and oddly I already know what it's going to taste like.

I've made this recipe many times, it's so good! It's a great base for experimenting too. Sometimes I add pickle juice and hard boiled egg, or salami or bacon or ham, or diced up cherry tomatoes and some balsamic with feta or fresh mozzarella and basil... Usually I just make it as shown, and it's always a hit at picnics or when I help my girlfriend meal prep. I love this recipe!
Exactly .... pasta salad is usually pretty forgiving .... u can add whatever to it like ....cooked white chicken breast ...cubes of ham...etc ....just dont overcook the pasta ....

I made this last night to let it sit overnight. I tried it today and it is without a doubt the best macaroni salad I've had. I did add a couple more tbsp of sugar though, 1/4 cup was perfect for my taste. The sauce was just enough to coat everything, unlike the stuff you get in the store that is like soup. I will definitely make this again.
+nicolle n. I don't think it's an overwhelming vinegar flavor. It just tastes like you put pickled vegetables in it. You could possibly do half vinegar, half lemon juice.

+Laura S (laursaurus) No problem (: you just have to find what works for you. Taste as you go. If 1/4 cup still isn't to your liking, add a tbsp at a time until you're satisfied. Just be careful not to go too far because as it sits, the flavors come out more.
Just made this recipe 3 days ago and it's all gone. There is just my husband and I and we ate it all in 3 days! It is the first time I'd ever made macaroni salad and this is by far the best I'd ever tasted. I will be making it over and over that's for sure. For me what made it so great was the little green onions that was so tasty. Now that vinegar made it extra tangy and so next time I might try a little more sugar or my husband suggested doing the apple cider vinegar with the mother! So I may try that. Made this for today’s potluck at work and wow! It got soooo many compliments 🥰 I’m very happy with it! I used less sugar and used rice vinegar instead of white vinegar. So good!

Dear Chef John. I made this macaroni salad the other day. Didn't have green onion or a poblano, but had all the rest. Was a little short on mayo too because it was the end of the jar, but it was enough. I got worried when I tasted the dressing as I was afraid it would be too salty even though I only used 1 tsp of salt, but it came out perfect and we like the kick it has from the jalapeno and the cayenne. This is sure to be a summer time staple around here. This is the first of your recipes I have made but watch many of your videos. Thanks.
I made this on the new years eve and it was sooo good.. every body loved it at the party and I would defenitly make it again for myself I'm craving it already. I used 2 Tbs of Dijon mustard but would put only 1 tbs to my taste next time . This is just a personnal preferance. Thank you Chef

This really is the best macaroni salad! My brother told me about it a year ago and I didn't try it. He mentioned it again a month or so ago and I finally decided to make it. Watching the video, I gotta say, I wasn't thinking it was going to be as good as he said- I was wrong--this really IS the best macaroni salad ever! I shared with my neighbor and they liked it so much they made it for 4th of July. Excellent recipe!!!
I followed the directions and made this yesterday and it tastes great...just one thing...using 1 lb of macaroni, this makes a whole lot of salad. Great for a church picnic or multi-family pot luck. Just me to eat it, next time I'll just cut the receipt down...but it is really good.

Miss that voice, Chef John and those upscale home inspired recipes. Macaroni salad reminds me of summer backyard barbecues. Suddenly, I am eight years old and have been assigned to the ice cream churner. Peach icecream to be exact. And these are a rainbow of food dishes being spread out on the table. One after the other and always..always there is a huge bowl of macaroni salad. Thanks for the memories..

It's not like I haven't made Mac. salad before but figured I check out Chef John's Deli-Style. Sure glad I did...going forward; this is the only way I'll be preparing it ever again! Thank you Chef John.
I double the liquid part of the dressing recipe (not the vegetables), then use half of that in the salad per the instructions, and save the other half if the salad needs a tablespoon or so of freshening the next morning, or if someone wants a little more dressing to add during the meal.
Every recipe I have ever borrowed from Chef John has turned out wonderful and this one is no exception. Some people now think that I can actually cook. The potato salad recipe is amazingly good also.
As advertised, this was the best macaroni salad I've ever made. I love your channel and will try most of the recipes, I've already done the Philly cheesesteak sliders and they were terrific!
This was the best I have ever made. I think not rinsing and allowing it to cool was the secret. I also noticed more vinegar than I usually use but it's great tasting. Thank you for the great recipe.
The dressing is the classic English salad cream. I've used this dressing for a longtime. Just last night I made some Tuna Salad, mixed with fresh squeezed lemon juice and this dressing.
lol as a Yank, I remember living in London in the 80's , my bandmate had,, i think it was "cross and blackwells"?? salad cream in his fridge. I remember trying it and saying, "this is macaroni salad dressing !! holy crap" could not find it back in the states.. that and my HP sauce !! Cheers
@@TANTRUMGASM HP is tough. Most supermarkets dont carry it. There's and Irish restaurant/bar on Staten island, NYC that uses it. The manager there gave me a bottle once, but I might be able to buy one of needed. The flavor reminds me of probably A1 Steak Sauce mixed with a small amount of Heinz 57. But I've never tried it.

I’m sure you could use, homemade pasta, mayonnaise and grow your veggies. But this hands down if you fallow every step, John says is truly the best pasta salad. And we as chicken, tuna or just more veggies to ours. But to semi pickle the veggies like he says makes such a massive difference. Thanks, John!

I made this salad yesterday for today, as directed. It was delicious!! And, yes it was very soupy last night, today, magically just right. I think the chopped jalapenos and the cayenne really made it. Lots of crunch too! Will definitely make it again and even take it to a potluck. It makes lots!

I use this dressing for potato salad as well. Perfect! Reminds me of the best deli I used to get it from when I was a kid. I was always searching for that exact flavor and this is it.
Ingredients for 12 portions: 1 pound (4 cups) uncooked elbow macaroni, cooked in well-salted water For the dressing: 1 cup mayonnaise, plus an extra spoon as needed 1/4 cup white vinegar 1 or 2 tbsp white sugar 2 tablespoons Dijon mustard 2 tsp kosher salt, plus more to taste 1/2 teaspoon ground black pepper 1/8 tsp cayenne 1/2 cup green onions, white and light parts 1 cup finely diced celery = 2 celery stalks 3/4 cup diced red bell pepper 1/2 cup diced green pepper (I used poblano and jalapeno) 1/2 cup grated carrot = 1 medium carrot
I just made this. Now...I've made a good mac salad in my lifetime many time. Chef John, you really kicked it up a notch with the Cayenne. Thanks for the tips too. I normally throw in peas, but this time I stuck to your recipe. The only thing I changed was the onion. I soaked 1/2 cup chopped fine onion in white vinegar.. drained then threw in. This one is a 10 folks. Kudos to the chef!

YUM! Just finished making a batch. ....but I didn't have all of the ingredients... celery specifically. SOOOO game changer as I had already pulled out the carrot for shredding and saw that I had a jar of Mezzerata California Veg mix which has pickled veggies like cauliflower, jalapeño, red pepper, carrots and celery for the most part (usually mild or hot) ... threw a cup or so of veggies in the processor to fine dice and mixed into the dressing mix. OMG!! Wow! REALLY amazing. 1st time EVER making mac salad and I think a new recipe is added to the collection. ❤👍
Don't tell, but instead of vinegar, I used the pickling brine from my canned Giardiniera because I like that touch of heat. Great flavor with this dressing. Thanks for another great recipe. I was tasked with making a macaroni salad for a family member and had never had one that didn't taste like a lunchroom or regret and drenched in mayo...until this recipe!
I do that sometimes, too. I break up the canned shrimp with my fingers first, it's very flaky and simple to do. Adds that seafood taste, people love it, but often can't figure out what my secret ingredient could be. Of course, you need to warn people ahead of time in case anyone is allergic to shellfish.

I use sweet pickle juice in place of the granulated sugar. Plus I chop sweet pickles into my salad.
Other than that, just the same. 👍🏼
Dill pickle juice is better!! And just skip the sugar. But it is all what you grow up eating!!

I used 2 Tbs of Dijon mustard but would put only 1 tbs to my taste next time . This is just a personnal preferance.

This really is the best macaroni salad! My brother told me about it a year ago and I didn't try it. He mentioned it again a month or so ago and I finally decided to make it. Watching the video, I gotta say, I wasn't thinking it was going to be as good as he said- I was wrong--this really IS the best macaroni salad ever! I shared with my neighbor and they liked it so much they made it for 4th of July. Excellent recipe!!!

I followed the directions and made this yesterday and it tastes great...just one thing...using 1 lb of macaroni, this makes a whole lot of salad. Great for a church picnic or multi-family pot luck.
Just me to eat it, next time I'll just cut the receipt down...but it is really good.

Miss that voice, Chef John and those upscale home inspired recipes. Macaroni salad reminds me of summer backyard barbecues. Suddenly, I am eight years old and have been assigned to the ice cream churner. Peach icecream to be exact. And these are a rainbow of food dishes being spread out on the table. One after the other and always..always there is a huge bowl of macaroni salad. Thanks for the memories..

My mom saves a bit of the dressing (without the veggies) and adds it right before serving. Very creamy that way.
I double the liquid part of the dressing recipe (not the vegetables), then use half of that in the salad per the instructions, and save the other half if the salad needs a tablespoon or so of freshening the next morning, or if someone wants a little more dressing to add during the meal.

Every recipe I have ever borrowed from Chef John has turned out wonderful and this one is no exception. Some people now think that I can actually cook. The potato salad recipe is amazingly good also.
As advertised, this was the best macaroni salad I've ever made. I love your channel and will try most of the recipes, I've already done the Philly cheesesteak sliders and they were terrific!

The dressing is the classic English salad cream. I've used this dressing for a longtime. Just last night I made some Tuna Salad, mixed with fresh squeezed lemon juice and this dressing.
lol as a Yank, I remember living in London in the 80's , my bandmate had,, i think it was "cross and blackwells"?? salad cream in his fridge. I remember trying it and saying, "this is macaroni salad dressing !! holy crap" could not find it back in the states.. that and my HP sauce !! Cheers
@@TANTRUMGASM HP is tough. Most supermarkets dont carry it. There's and Irish restaurant/bar on Staten island, NYC that uses it. The manager there gave me a bottle once, but I might be able to buy one of needed. The flavor reminds me of probably A1 Steak Sauce mixed with a small amount of Heinz 57. But I've never tried it.
I make mine like my mom did but I’ll try this one, it’s June and my church has picnics during the summer months.

Nothing else, Chef John. This has been the only macaroni salad recipe I've ever used because the first time I made it several years ago, I knew I would never need any other. I’m sure you could use, homemade pasta, mayonnaise and grow your veggies. But this hands down if you fallow every step, John says is truly the best pasta salad. And we as chicken, tuna or just more veggies to ours. But to semi pickle the veggies like he says makes such a massive difference. Thanks, John!

I made this salad yesterday for today, as directed. It was delicious!! And, yes it was very soupy last night, today, magically just right. I think the chopped jalapenos and the cayenne really made it. Lots of crunch too! Will definitely make it again and even take it to a potluck. It makes lots!

I find using some whole buttermilk to freshen it up works as well as mayo & water.

I use this dressing for potato salad as well. Perfect! Reminds me of the best deli I used to get it from when I was a kid. I was always searching for that exact flavor and this is it.
The type of dressing used in this recipe is known as an English salad cream dressing.
I ❤️ macaroni salad. I can eat it for breakfast, lunch, and dinner alone.
Ingredients for 12 portions:
1 pound (4 cups) uncooked elbow macaroni, cooked in well-salted water
For the dressing:
1 cup mayonnaise, plus an extra spoon as needed
1/4 cup white vinegar
1 or 2 tbsp white sugar
2 tablespoons Dijon mustard
2 tsp kosher salt, plus more to taste
1/2 teaspoon ground black pepper
1/8 tsp cayenne
1/2 cup green onions, white and light parts
1 cup finely diced celery = 2 celery stalks
3/4 cup diced red bell pepper
1/2 cup diced green pepper (I used poblano and jalapeno)
1/2 cup grated carrot = 1 medium carrot
Double the sauce ingredients or you will have to add more after its been in the fridge.

I normally throw in peas, but this time I stuck to your recipe.
The only thing I changed was the onion. I soaked 1/2 cup chopped fine onion in white vinegar.. drained then threw in.

YUM! Just finished making a batch. ....but I didn't have all of the ingredients... celery specifically. SOOOO game changer as I had already pulled out the carrot for shredding and saw that I had a jar of Mezzerata California Veg mix which has pickled veggies like cauliflower, jalapeño, red pepper, carrots and celery for the most part (usually mild or hot) ... threw a cup or so of veggies in the processor to fine dice and mixed into the dressing mix.

Don't tell, but instead of vinegar, I used the pickling brine from my canned Giardiniera because I like that touch of heat. Great flavor with this dressing. Thanks for another great recipe. I do that sometimes, too. I break up the canned shrimp with my fingers first, it's very flaky and simple to do. Adds that seafood taste, people love it, but often can't figure out what my secret ingredient could be. Of course, you need to warn people ahead of time in case anyone is allergic to shellfish.
