Karaage is honestly by far my favorite fried chicken. Also, there's nothing better than eating fresh hot karaage while drinking an ice cold beer. Awesome combo.

I went to high school in Japan. The cafeteria had Karaage on top of a bowl of rice for 300 yen (about $3 USD at the time). I miss that glorious bowl so much.
Usually the base flavors are egg, soy sauce, garlic, and a pinch of salt, but my mom's recipe also adds ginger. Important to also poke the chicken all over with a fork to ensure the flavoring gets inside.marinate for at least 2 hours then coat it with flour or rice flour. You can also use panko as a coating. Good stuff
Karage is different because it traditionally uses corn starch/potato starch and all purpose flower as a coating to fry , compared to traditional fried chicken which include a wet and dry batter.

He is correct about there not being any dipping sauces, the Karaage is usually served with lemon and Japanese Mayo in Japanese restaurants. So what I like to do after I squeeze the lemon on to the Karaage is add pepper flakes to the mayo, mix it up and man….. Beyond delicious!!! I’m up here in New York trying to hold down hold it down and it’s tough as I’m sure you know you’ve ever lived in a major city it’s really hard to hold it down and sustain enough to stay where you are I just want to say thank you for Everything you do here

I just decided yesterday (been wanting to makenthis decidion and make it happen since 2010 tbh…) Im moving back home to NYC. Its a long overdue move. Illbe able to find work no problem. Finding anapartment isthe hard part in NYC. BUT InHATE upstate boring country life. I hate driving. Some ppl love upstate. Not me. So thats what goin on

A lot of people marínate in buttermilk and I’ve heard nothing compares. You can try so many other options but it won’t be as tender and juicy without buttermilk

Only thing it needs is some spicy fresh dip. (Thai chilies, with soy or fish sauce and vinegar) before a mayo coleslaw. Then pair it with a fantastic Canadian Poutine. Ultimate comfort food.
I also like Japanese fried chicken the most... it's garlicky and gingery, not too crispy, fragrant, etc. Sometimes you just don't want to eat too heavy

There's a chain here that fries their chicken kind of like Karaage-ish, without breading, and it's my favorite spot of "normal fried chicken." The older I get, the more I realize that breading is mostly just an eyes thing.
I can see fried chicken and mayo working, because honestly the mayo on the chicken sandwiches I've had (especially McDonalds), that particular condiment seems to tie everything up well, in a weird but delicious way. It just kinda works I guess. Also the origin of fried chicken is a toss up between West Africa and Scotland. Apparently Africans coming to America during the slave trade are what first brought that style of cooking chicken to the US. They obviously brushed shoulders with Europeans and so the two styles were combined and later evolved to the American style of frying chicken. I believe the primordial method of frying chicken was literally just using any available fat as a medium for aiding in cooking it.
Ben I know what you mean about not needing sauces for that type of fried chicken, I’m Indian and we have Chicken 65 which is made similarly and it’s usually eaten by itself too

I ate karaage in Japan, Beppu and it was the best chicken I ever ate and arguably one of the most delicious dishes I ever ate in my life.
