In France we have a specialty called "préfou", it's just an uncooked baguette stuffed with butter, garlic and fresh parsley and then baked. It was used by baker to check if the oven temperature was correct. I think it's the same backstory for the pizza or the flammekueche (another French/German specialty) : instead of wasting dough if the oven was not hot enough, they added things on it to make it palatable anyway.
i'm in switzerland close to alsace, so i only knew about the fantastic thing that flammkueche is haha but i'll be sure to try préfou, because this sounds like something everyone should eat :D (like garlic bread lol)
Making most breads is easy and a great reliever of stress if you knead it by hand :). Also, you can add your own flavours to it like make a rosemary pan cubano and turn that into garlic bread.

a good way to avoid the issue of uncooked garlic bits in the "roll in foil and bake" method is to use roasted garlic instead of freshly crushed. It also adds a little bit of a smokey flavor, if that's something you enjoy.
Probably going to garner a lot of hate for this, but the next day garlic burps are so nauseating that I also have a garlic threshold (although I don't mind eating it at the time). Too much raw garlic is also overwhelming and a heartburn nightmare.
My favorite part of this series is when babish decides that even though he has made the thing, he wants to go even harder and do it ALL FROM SCRATCH. One of these days I'm expecting him to go out to a cow and make his own butter from cow to kitchen.

This really makes me want to try making garlic bread the way my grandma does: the process is pretty much the same aside from the way she cuts the bread, rather than slicing it into two long pieces of bread she slices like regular vertical cuts of bread, but rather than cutting it the whole way she just cuts up to half/two thirds of the way through, leaving the bread slices still connected to the whole. Then all you gotta do is put the delicious butter and garlic mixture (sometimes including a bit of cheese too) inbetween those slices then baking. The end result is really nice looking, plus you have the extra fun of tearing off the slices of garlic bread.
Your grandmother's way sounds delicious! I believe that cutting/slicing process (not all the way through) is called hasselback. Often times with potatoes and stuffed with a variety of ingredients and cheeses.

personally, I make slits in the halved slices of bread themselves before applying lavish amounts of the spread and lathing it into the crevasses, and then that buttery garlic goodness PERMEATES every bite. Every. Goddammed. Bite :)

i know its 2 years old and will prob never be seen, but as a chef i learned an amazing thing to do, normally you'd see stuff like baguettes have these diagonally cut slices. if you pre cut like 80% of the way through before you put it in the oven you can put more garlic butter in there and let it soak into the bottom of the bread. as your cross section its garlic butter on top and just pain bread on the bottom. this lets it seep through into all the bread. so the only "fully bread part" is the crust. making the crisp and stuff feel nicer and the inside so buttery and smooth
Went ahead and made this last night (store bought giant Italian loaf), and used the second tray to compress. It was incredible. We are garlic bread-obsessed people, so this was a treat. We lost some of the butter in the melting process, which was heartbreaking, but most of it was there. When my POS induction stovetop undercooked the chicken, and I needed to put it all in the oven to continue cooking, we just inhaled the garlic bread. It was gluttonous, and magical

Got a place here called Black Angus Steakhouse, and they got this three-cheese garlic bread appetizer. I shit you not, it is the single greatest food I've ever eaten in my entire life.
My family has been making our own garlic bread for salads and other dishes, though they are a lot simpler in comparison. First we toast the bread in the toaster. This step is a little tricky since you need to make sure that the bread is toasted enough for the next step, while not having it to toasted for the final step. Next take a clove of garlic and dip it in salt. Then rub the garlic clove (salt end) on to one side of the bread. This is tricky to do if you didn't toast the bread long enough. Rub the garlic as long as you want to on the bread so that it is as garlicky as you want it to be. Flip the bread and repeat the previous step. Keep doing this until you have rubbed garlic on all the bread. Brush or drizzle olive oil on both sides of each slice of bread. I say brush or drizzle because it depends on if you do the next step or not. Final (optional but recommended) step is to toast the bread again, but at a lighter setting. This will make the break nice and crispy. If you do this step, then you should brush the olive oil on the bread instead or drizzling it. It is no where near as fancy as these garlic breads, but it gets the job done.

watching this has made me realize that the homemade garlic bread i grew up with was very sad. you take a slice of whole wheat bread, toast it, slather in butter, sprinkle parmesan/other cheeses and garlic powder on it, put under the broiler for a little bit, voila! this is way better

Me, eating instant ramen soup as I watch binging with babish: yeah me cook too
i know its 2 years old and will prob never be seen, but as a chef i learned an amazing thing to do, normally you'd see stuff like baguettes have these diagonally cut slices. if you pre cut like 80% of the way through before you put it in the oven you can put more garlic butter in there and let it soak into the bottom of the bread. as your cross section its garlic butter on top and just pain bread on the bottom. this lets it seep through into all the bread. so the only "fully bread part" is the crust. making the crisp and stuff feel nicer and the inside so buttery and smooth

We lost some of the butter in the melting process, which was heartbreaking, but most of it was there. When my POS induction stovetop undercooked the chicken, and I needed to put it all in the oven to continue cooking, we just inhaled the garlic bread. It was gluttonous, and magical

My family has been making our own garlic bread for salads and other dishes, though they are a lot simpler in comparison.
First we toast the bread in the toaster. This step is a little tricky since you need to make sure that the bread is toasted enough for the next step, while not having it to toasted for the final step.
Next take a clove of garlic and dip it in salt. Then rub the garlic clove (salt end) on to one side of the bread. This is tricky to do if you didn't toast the bread long enough. Rub the garlic as long as you want to on the bread so that it is as garlicky as you want it to be.
Flip the bread and repeat the previous step.
Keep doing this until you have rubbed garlic on all the bread.
Brush or drizzle olive oil on both sides of each slice of bread. I say brush or drizzle because it depends on if you do the next step or not.
Final (optional but recommended) step is to toast the bread again, but at a lighter setting. This will make the break nice and crispy. If you do this step, then you should brush the olive oil on the bread instead or drizzling it.
It is no where near as fancy as these garlic breads, but it gets the job done.

@@2nd_to_None Don't really have a definition of it. It's just he himself has called himself "Not a chef". I believe it was during the "Babish answers questions from Google" video. Another instance of him saying it was when he worked at the Kitchen of the Regular from the same channel as Hot Ones.

Chefs work in restaurant kitchens. It's very different compared to cooking at home. Being a chef is a profession and Babish is not a professional chef, although he is a very, very good cook. I admire him for making the distinction and not self labeling himself as a chef.
watching this has made me realize that the homemade garlic bread i grew up with was very sad. you take a slice of whole wheat bread, toast it, slather in butter, sprinkle parmesan/other cheeses and garlic powder on it, put under the broiler for a little bit, voila! this is way better

Garlic is noted in recipe books in Italy dating back to the 15th century. Try again.
It's italian american which is it's own unique cuizine.
A heavy sprinkle of parmesean cheese and then tossed under a broiler to brown up the cheese is the perfect topper for garlic bread.
