    Do you peel the ginger first before grating?

      Hello! I did not peel the ginger first. Mostly because I'm lazy and don't care if some of the peeling is in the ginger. It's also grated so the peeling is small. However, peel away if you want too.

      @@tarawhite8847 Ha! So glad we are on the same page! However, if you want/or need to peel the ginger you can easily to so with a spoon. But, I choose to not do so if I don't have too!!!

    I don't have a canner. What do I need to do?

      Hello! If you don't have a canner you can use a large stock pot that has enough room to have the jars lifted from the bottom of the pot using a kitchen towel, rings or trivet. Just something the jars can sit on for even heat distribution, sitting directly on the bottom of the pot does not allow for that. The jars need to be submerged under water by 1 inch as well. No need to buy a canner if you don't want too.
