What Are The Ingredients In The Beet Crackers?
Each cracker starts with:
wholesome beets, along with
ground flax seeds,
chia seeds,
sesame seeds,
sorghum and arrowroot flour,
and few spices for flavor.

Tried it. Remains soft if I don’t put a very thin layer and crisps only when they turn a little brown. Next time I will try rolling as thin as possible.. taste really nice though.
2 Things makes crispy crackers: 1) rolling them very thin 2) and a lower temperature. Try to roll them as thin as 2 mm (0.07 inch), I guarantee you'll get very crisp crackers! In case you still have thick crackers, just lower the temperature to 250F and let them bake longer, or turn the oven off while leaving the door cracked a bit, they will basically dry out.

They look less than 3 mm. Your blender is only meant for foods with liquid otherwise it puts a strain on the machine & can make it smoke ,unless your machine states you can grind in it. But I would recommend using a grinder for seeds, nuts & dry hard items.

I don't know if you can, they need to lay flat while cooking. You can probably make and freeze them and then drop the in the air fryer so that they keep their shape. If you're willing to experiment, go ahead :)
What can I use instead of sorghum powder?
Can I replace arrow root powder with psyllium husk ? What would be the measurement please

Also, I'm in a current phase of not eating oil, so I'm thinking of substituting the avocado oil with sesame tahini. What do you think?

Yes you can use any gluten free grain flour: millet, amaranth, rice, buckwheat or teff. As for the oil you can omit it entirely, the only drawback is that they will be probably less crispy. Also I'm not sure what result will you get with tahini, so feel free to experiment :)

any starchy flour of your choice, you can leave it out but they might no have a sturdy texture.

Yes you can, up to 3 days. I can't tell about freezing, as I never tried it.
How do you think they would turn out without the added avocado oil?
You can omit the oil, I added it just to help with crispness

Does it have to be avocado oil?
I use avocado because is flavorless and is heat resistant but you can use any oil you like.
