How To Make The Singapore Sling

  • Today on Booze On The Rocks, we make the Singapore Sling cocktail served at the Raffles Hotel. Created by Chinese-born Ngiam Tong Boon in 1915 at the Long Bar in the Raffles Hotel, the Singapore Sling has passed the test of time. Although there are now, many versions found all over the world. Gin, Grand Marnier, cherry liqueur, herbal liqueur (typically Benedictine), pineapple, lime, bitters, and club soda are the main ingredients in this complex drink. The recipe was first made public in Harry Craddock's masterpiece "The Savoy Cocktail Book," released in 1930. It became the subject of subsequent recipes, and by 1948, David A. Embury claimed in his book "The Fine Art of Mixing Drinks" that no two published recipes were identical. The Singapore Sling is sophisticated, subtle, and ingredient-heavy at its best. It also begs for investigation, and s s a result, broad notes and nostalgia serve as the foundation for most "traditional" cocktail variations. Many contemporary variations tend to be excessively sugary beverages that depend more on grenadine and pineapple juice than on herbal liqueurs and fresh citrus. This recipe is as authentic to the original as one can make it. Try it out and let me know what you think.

    SINGAPORE SLING
    Dry Gin 1 oz/30 ml
    Cherry Liqueur .5 oz/15 ml
    Orange Liqueur .25 oz/7.5 ml
    DOM Benedictine .25 oz/7.5 ml
    Angostura Bitters 1 Dash
    4 oz/120 ml Pineapple Juice
    .5 oz/15 ml Lime Juice
    .3 oz/10 ml Grenadine
    Method
    1. Add all of the ingredients to a shaker tin.
    2. Shake with ice for 10-15 seconds.
    3. Fine strain into a Hurricane glass over fresh ice.
    4. Garnish with a pineapple chunk and cocktail cherry perched on the righht side of the glass.

    Great facts. I’ve seen the machine that was created to shake multiple Singapore Slings at a time. Super fun to watch. I think we all have Benedictine sitting around. Good time to put it to use. Cheers Dave!

    Hi David this is a lovely drink. I have made it many times to this recipe. It was my younger daughter’s favourite for a long time before the Alba Rosso became her favourite.
    The Singapore Sling is lovely, it just takes a while to make, that in itself builds the thirst and appreciation! A summer drink if ever there was one. Nick from York

    I recently went to the long bar on vacation and had 2 of these. Two will cost you $92 singapore dollars after tax and service charges, ($68 usd) but it was worth it. You get all the free peanuts you can eat and just throw the shells on the floor.

    I liked this drink a lot (8/10). I had Tuanqueray dry gin but otherwise the same ingredients as you / the recipe. Well, my grenadine was home made. Just now I came to think of making this and swapping the gin for some nice rum...

    Hey thanks for this! I am wondering, what's the exact name and model of that glass so one can get that perfect size that seems to fit that drink perfectly? Did you get it on Amazon?

      I got this before I started my Channel from a Restuarant supply store however it is 16 oz/480 ml. They are hard to fing but here is a link to a similar size and shape that would work for what you want amzn.to/44sBw6T

      @@boozeontherocks So a Libby Hurricane glass of 16 ounces would be perfect? What is odd, is the recipe you used, which is more or less the same as done at the Raffles Hotel in Singapore, I looked on their website where they sell their glass. They claim the glass is 380 ml, which is under 13 ounces. That can't be right.

      @@Acujeremy That is a good question comparrison. One of the things you need to look at is the amount of ice in the glass. I.e. the shape and size. Smaller cut ice will take up more space, larger ice will ake up less space.

      @@boozeontherocks But can't we say no matter what type of ice, if the bar is shaking this drink over ice and straining into a glass over ice, there is no way the glass can be under 14 or 15 ounces?

      @@boozeontherockshey buddy , just letting you know , turned out great , me and the wife had two each . Not as sweet as I expected it to be , more on the tart side .
      Was really nice , will definitely be having them again . Was well worth the try . Perfect summer drink …
      Next time I will try with the proper Cointreau , only had triple sec

    I remember trying this for the first time back in the 90s and it has been my favorite ever since. But I will say it does have many variations depending on the bartender.

    Hi Dave! This isn't a go for me - I have never liked this cocktail - but I know many people who do like it! I think for me it's too sweet. I like more herbaceous, dry cocktails, much less sweet, and my passion are the stirred classics - but I am going to pass this video on to a friend who loves this cocktail! Happy Friday!! 🙂

    That is like the original and it's good but there's way more pineapple than necessary.
    You still get all the flavors but the balance is better... for me.
    It tastes more like a cocktail than fruit punch
    1-1/2 Gin
    1 Pineapple Juice
    1/2 Lime Juice
    1/4 Heering Cherry
    1/4 Benedictine
    1/4 Clémont Creole Schrubb
    1/4 Grenedine
    Dash Fee Bros Orange Bitters
    Top with Seltzer. It tastes better and more refreshing diluted so it's not so syrupy.

    Way too much pineapple juice.
    It should be around 1.5 to 2 ounces.
