  • Every culture has their rendition of chicken and rice.
    Though simple to prepare, my recipe for traditional rice and chicken is rich in flavor from the pestata base and loaded with succulent chicken chunks.

    Love this one. I like writing down the recipe making it the first time and seeing what it tastes like than making notes to change it up in different ways.
    Drinking the wine besides cooking with it helps a lot. :)

    This is an awesome recipe. So delicious. The 2nd time I made it I added a tablespoon of lemon juice and fresh basil right at the end. A nice variation.

      Ahhh. Great minds think alike. I wondered what a little lemon zest and a touch of lemon juice would add to this dish. Glad you already did it
      I’m also thinking maybe some fresh orange juice instead of lemon.

      Hi Cathy, here is the recipe. Enjoy!
      Traditional Rice and Chicken Serves 4 to 6
      11/2 pounds boneless, skinless chicken thighs
      1 cup onion cut in 1-inch chunks
      1 cup carrot cut in 1-inch chunks
      1 cup celery cut in 1-inch chunks
      2 plump garlic cloves, peeled
      1/3 cup extra-virgin olive oil
      1 tablespoon kosher salt
      1 fresh bay leaf
      1 cup dry white wine
      5 cups hot chicken or turkey stock, plus more if needed
      2 cups Italian short-grain rice, such as Arborio, Carnaroli, or Vialone Nano for
      finishing
      2 tablespoons butter, cut in pieces
      3 tablespoons chopped fresh Italian parsley
      1/2 cup grated Grana Padano or Parmigiano-Reggiano, plus more for passing
      You will need a food processor; a heavy saucepan, such asenameled cast iron,10 inches wide, 3-to-4-quart capacity, with a cover.
      Trim any excess fat from the chicken thighs, and cut them
      into 1-inch chunks.
      Using a food processor, mince the onion, carrot, celery, and
      garlic into a fine-textured pestata. Pour the olive oil in the saucepan, and
      set over medium-high heat. Stir in the pestata, and season with 1 teaspoon of
      the salt. Cook for about 5 minutes, stirring frequently, until the pestata has
      dried and begins to stick to the bottom of the pan.
      Toss in the chicken pieces and the bay leaf, and sprinkle
      over it the remaining 2 teaspoons salt. Tumble and stir the chicken in the pan
      until browned and caramelized all over, about 4 minutes. Raise the heat, pour
      in the white wine, and cook, stirring and scraping up the browned bits in the
      pan, until the wine has almost completely evaporated.
      Pour in the hot stock, stirring, then all the rice. Bring to
      the boil over high heat, cover the pan, and reduce the heat to keep the riso
      bubbling gently. Cook for about 14 minutes, or until both the rice and the
      chicken chunks are fully cooked and the consistency is creamy (see box).
      Turn off the heat, drop in the butter pieces, and stir
      vigorously until thoroughly amalgamated, then stir in the parsley and 1/2 cup
      of grated cheese. Spoon the riso into warm pasta bowls and serve
      immediately,passing additional grated cheese at the table.

    I hate the breast. Less moist, less flavorful, less tender. I really don’t understand how chicken breast is more preferred other than it’s quicker to cook.

    I love all of these non-"Sunday Gravy"/non-tomato sauce-based Italian dishes. REAL Italian....not New York-Italian.

      no sauce italian dishes in my opinion are the best , you taste everything. i also like tomato based italian dishes dont get me wrong. i love it all lol

      You can make Mexican style rice, it has a lot of tomatoes in it, but it is served without the juices. Just let the rice absorbe it.

    I made pasta with gorgonzola and saffron sauce last night. It was delicious, simple, and affordable during the Covid19 pandemic. I make arroz con pollo Spanish style (not Mexican for those that don't understand the difference), I don't like it too runny and don't add any cheese either. Rice is a noble ingredient.

    Pitocàr, chiedere la carità. The music, from south Italy, is not appropriate for a rice recipe: We, in the north, ate rice, polenta, patate, sauerkraut(we from the Austrian Emppire) etc. In southern Italy pasta. Sono cattivi, mangiano riso. They are bad people, they eat rice, an old saying amongst southern italian regarding the northerners.

    Chicken and rice is a staple dish in every culture. Indian and Pakistan have their s Biriyani, the Spanish with their paella and America with their Rice-A-Roni LOL to me they’re all uniquely good. to this Italian dish I Would add a pinch of saffron to spice it up

      Chicken Perlo is an amazing American version of chicken and rice, as is a well-made chicken Jambalaya. Regional cooking in America (our specialties) is so much better than what's known nationally or commercially.
