    Penne alla vodka is god tier! From what I understand it was actually very popular in Italy in the 1970s-80s. I love how you go into the history of the dishes. Very informative!!

      Yes, in fact this is a dish that was "fashionable" by us in Italy in the 1970s-80s. But still it remains a classic even today.

      I can tell you that my Mother made it in '78. She was a lush, and wine fell into her sauces, but vodka was not one of them, until it was. In 1978. This is in NYC and my Mother worked in the biz. So do some research on chicken divan, and then come talk to me. HINT.

    Wish we had found this place years ago - was in Florence before smart phones so got stuck in a lot of tourist trap places which were lousy. I did like the Italian beef sandwiches you could buy in the central market however - they were very tasty!

    Me and my mate happened to be in Florence at the same time so we kept checking your instagram to see where you were eating so we could eat there too lol (not stalking you, just the food). This place was amazing and my first time trying penne alla vodka! Also the sandwiches at all’antico vinaio were legendary

    Florence holds the most special place in my heart. The day I visited, we took the train up from Rome. We spent the whole day walking around, looking at David, Ponte Vecchio, Uffizi, everything! And then late at night as the sun was setting, we ordered a bistecca alla'fiorentina, and ten minutes after starting to eat, I got an email that I got into the PhD program of my dreams!! The waiter brought over Limoncello and Grappa and literally took a shot with us to celebrate before just going right back to helping other tables! :) A night I will never forget; this brought me back, love your videos so much dude.

    Polpettone literally translates to meatloaf. It means "big meatball" (polpetta means neatball), which is essentially what a meatloaf is if you think about it.

  • @italiano120
    @italiano120 ปีที่แล้ว +16

    Penne alla vodka was a fad in Italy in the late '70s and '80s, as adding cream in many dishes. Today that style of cooking you can find in thematic ironic dinner party with other dishes as strawberry and champagne risotto or scampi cocktail.
    PS. Polpettone is litteraly "big meatbal" but it is how we call meatloaf.

    I’ve lived my adult life in NYC surrounded by the food culture, working 15 years in Manhattan’s Little Italy. While many restaurants in that neighborhood serve Penne Alla Vodka, not a single one I’m aware of will tell you it’s an Italian dish. None of my Italian foodie friends say Vodka Sauce is Italian. Lastly, following countless Italian chef blogs, vlogs and socials, not a single Italian recognizes this dish as from Italy. As you say, the combination of cream/tomato is against the core of traditional culinary beliefs. That said, I wish I had a nickel for everyone in NY and Jersey that told me they knew guy (or restaurant) that invented it 😂

    Penne alla vodka was quite popular in Italy up to the 90's. By the way, "polpettone" is in fact meatloaf and not meatballs

    You say nowhere good doesn't have tourists, but that's not quite true with the stubborn Italians! Lol. There are def some restaurants with stubborn owners that don't have any tourists at them quite intentionally. Story time:
    I have some American friends who work for the State Department who lived in Rome for abot 5 years or so. There was a local restaurant around the corner from their apartment that never "had any tables available" for well over a year whenever they tried to eat there. The restaurant wasn't actually full every day. They just considered themselves to be a neighborhood restaurant and told tourists or anyone who didn't seem like a local that they were booked. Eventually, after more than a year, they finally realized they did live full-time in the neighborhood and were able to start eating there. Like many other neighbors, they started to eat there a few times a month (sometimes a few times a week...). I got to go with them when I visited and it was TO DIE FOR. Holy shit was it good. I got penne alla carbonara. So good. I was sopping up everything left with bread---not just my plate but everyone's. As a result the waiter started saying "ehhhh scarpetta!" to me all the time. Lol. At the time, I was told he was calling me a mop (which is kind of true), but I've since learned it's a word commonly used to describe what I was doing, i.e. sopping up sauce with bread. Anyway, knowing how Italians can be pretty stubborn about their food and also aren't always as profit-driven as hyper-capitalist Americans, it wouldn't surprise me to learn that many other restaurant owners might have a similar viewpoint.

    I get the feeling that Americans i general are very picky about rare meat, is that correct? Whenever I see a post on Instagram from a "meat account" that makes steak tartare, there's hundreds of comments from (supposedly) Americans complaining that the meat isn't cooked. Is the beef quality in USA bad or is it just a cultural thing?

    I came to Florence in 2015 for college (in my 60s). I had been here in 1997 with my Sicilian American born dad. I fell in love with Florence then, so when the opportunity to study here for a year came I jumped at it and then stayed to study an additional year. At that point I couldn't imagine leaving, it would have broken my heart. I did have to return to the States for 3 months because I needed a new Visa. I used that time to get rid of EVERYTHING I owned (had no Plan B by the way), scored another Visa to attend an ESL school, returned and worked to get my Italian citizenship (Jure Sanguinis) which I got March 9, 2021. This is my last stop in life and the best decision I ever made. The food, the people, the city - I am living a dream.
