An idea for the Stainglass windows, you could hang them independently in the upper levels of the library in the windows they would create beautiful lights among the books and artwork. When one would walk into the lower level of the library they would look up and be enchanted by the lights. You all are doing great work, you are amazing to watch every day you are accomplishing a great deal.‼️

Back in the early 1990s I visited a new place in Raleigh, North Carolina, that was being converted to a swanky bar. In that bar was an ornate wooden vintage western style bar complete with mirror, shelves and carvings. Your bar will look as strikingly stunning someday. The entire convent will be a venue of the upmost importance on a high Michelin scale.
It is awesome that you allow Simon to recycle lights, doors, etc. into his home. Chez Yanis with the mouse is an amazing tribute to Yanis. Billy you have an amazing heart, You, Simon, Yanis, Rick, and your dad have me hooked to watch until the very completion of this project.
I was involved with a high profile building refurbishment in London. In the foyer there was an electrical distribution board and FA panel which had to be visible. We installed a hinged oak framed glass panel in front of it to improve its aesthetics. Perhaps you could do something similar for your electrical panel.

For Simon: if you want to play with those fluorescent lights, at least in the US, there are now LED tubes available for older fixtures. You have to take out the ballast (I think that is what you call the starter) and wire them in directly. Brighter and quieter and longer lasting.

Billy the pane glass windows have an storage space behind them , you could keep supplies for the bar such as straws and extra bottles of Alcohol in these spaces including napkins . So you don't have far to go to get supplies for the bar on a daily basis .
I've always had an appreciation for the architecture of the past, and dreamed of rehabbing some older structures! I've always wanted to see a full blown castle, rebuilt as close to historically correct as possible, including the process of gathering materials, like hand hewn timbers! None of the new, but revisiting the old ways! Time consuming, but I think it'd be worth the ultimate rehab!!!
There is a channel that literally built a building the old way. With original tools made by forging steel. Sorry cannot remember the name, but you can look up castle built the old way, or something like that.
Where that former storage area was.. you should put new doors and shelves in there and use it for storage of items needed in the dining room. No need to change the wall because it won’t be seen when the door are closed and when opened you will see some of the history of the convent. Great Chez Yanis sign!
Billy, a few of those colored panels could be quite nice on the wall behind the bar as backlight decor. Many bars put their alcohol bottles in front of something like that and let the colored light come through the bottles.
Billy - The Stain Glass Doors can be made into the by folding doors to separate the bar from the chapel area if needed. Just a friendly suggestion. That’s an amazing idea to call the bar “Chez Yanis”, love it👏🏼🥰👏🏼 Enjoy the weekend.💛🙏🏼💛

There’s an old heritage house which just completed a AU$30 million (€18 million) renovation here in Brisbane, Australia. They lovingly restored the massive stained glass panels in the ceiling above the old beautiful oak staircase. Huge panel that eliminates the stairwell. Another idea for your surplus panels in the bar. (For those asking - it’s called ‘Lamb House’ and you can watch the renovation at ABC Australia).

It is generally ideal for artwork to be hung at eye level. If you had a piece of art, (or tapestry, or whatever) you might want a piece that was taller than what the utility cabinet is and if so, you might think about putting another stud vertically centered above the utility cabinet, so you'd have something to nail to.
Sad that the stone walls will be covered by plasterboard etc but I understand your reasons for it. Glad the stone part isn't being damaged and will be preserved! Please put the recording device in the kitchen soon. Love the Chez Yanis bar name! Well done Billy and team! Enjoy your weekends 😊

I love the Chez Yanis. I think you can use those glass doors put them in front of the windows. They will dim and color the light the light much like they were designed for originally. You can even back light them with LED lights. I think Billy you will become the proprietor of several businesses in that Convent. I know you say you just want to build it not run it, but you just might find a way that works.

I would have suggested putting a built-in china hutch in the wall there, only I would have disguised it behind paneling. I just seems a shame to block off every bit of wall storage in that building.

Mick is really something else, Billie naming the bar after Yannis what an amazing man you are, he's put so much of his heart into the building but your tribute to him is why we come back daily.
