    Thanks so much for this recipe! I just tried it, and it was fantastic! And of course, I had to offer some to my roommate as well, and he liked it too! I didn't use any tofu, and I made it with mushrooms, broccoli, carrots, and peas, and instead of brown sugar, I used maple syrup. I put it on top of brown rice. Fabulous food!

    Wow ! That's looks amazing and seems like it's well adapted for easier Thai food with some substituted ingredients. If I wanted to try using paneer instead of tofu would it be good ? And maybe fish sauce instead of salt ?

      This recipe need coconut cream as well as milk and the thai curry is only made with coconut milk and cream

    If you want to add oil just simply add a Teaspoon, why extract it unnecessarily from the Coconut milk it will loose the flavor and again you added a Cup of coconut milk is OK but adding extra water will result in a Runny consistency instead of its Natural Creamery texture.
    Also Coconut Milk will loose its Nutritional properties, so at the end you are consuming only fibers and flavored water.

    I started looking at this recipe due to title "vegan" specifically, as I'm looking for how a red thai curry is made without any shrimp paste or shrimp in it, as most ready made red curry pastes tend to have it!
    So one, video just uses ready made, but, not showing how to make the paste yourself, hence avoing the shrimp paste! Also, when titling "vegan" , it would be a good practice to mention this to the audience to sorce a product accordingly?
    Sorry, but, this is not a destructive criticism, but, a constructive one to help all in concern?
