For this jerk chicken recipe you'll need...
3-4 3lb chickens
1 cup jerk marinade
1/2 cup olive oil
adjust salt to your own liking

Hey Chris, great recipe. This is exactly what I plan to do this weekend. One thing I’d like to point out is when you soak your wood (logs/chunks/chips) it creates steam before it can smoke. Try it without soaking and let me know what you think.
In my experience with medium chunks of wood, the steam doesn't last very long so I don't see any real reason to be concerned. Besides, he waited 15 min b4 he put anything on the grill so no harm no foul right? No pun intended 😁
Steam helps the smoke permeate the meat. That is what the water pan in a smoker is for, create steam. I prefer to use beer for steam and basting chicken in my smoker. Just my .02

I cook my chicken the same way but i use diffrent seasonings im from louisiana so i use mostly cajun seasoning but i inject the chickens with garlic and herb butter

Looks great!! I use Applewood too and some soaked dried bay leaves and whole allspice. Never tried adding bbq sauce, but will give it a go.

165 is temp you want for all poultry
It looks great but I was waiting to see the tricks @ the end but you both showed us nothing? Chef mark said if you don't have an internal theromonter you will discover ways to check yr meat. You guys just ended without saying?

The color tells it all! It’s almost as if they were kissed by the sun! #melanin With indirect heat and smoke, it was likely within the internal range within the first hour or so. The last 30 minutes, I would assume, was probably when they added the already warm bbq sauce to caramelize the sugars in it with fire. At 400 degrees...I KNOW this was done.
Why didn't you use the smoke box on the side of the grill?

I think time vs temp was the primary reason. Using the side box, you smoke at a lower temp. They purposely smoked at a higher temp because time was an issue. I had a similar barrel with side box, and you typically lose a lot of smoke without mods.

FYI. Soaking wood produces steam and you want a dry heat to crisp chicken

I am about to throw this one on my pellet grill and smoke.
I had the same grill and it sucks to cook on because it doesn’t transfer heat the full length of the grill. You should be able use the smoke box effectively, but I guess you get what you pay for 😂😂😂
