What does it smell like? Is there not a concern about bad micro organisms without salt or starter culture? I love maypop passionflower. I make tincture out of it as well as eating them.
Good point. I probably wouldn't recommend keeping it for too long. I have it sealed in the refrigerator and last year none of it spoiled even after a few months. Smells a little like pickle juice with that flavor of passionflower/leaves. Of course you can do an alcohol extraction but it doesn't seem to take on the brilliant color. I imagine the water extracts a different profile of constituents.
also meant to tell you about the prairie turnip. Thanks for sending it. It finally germinated over the summer after I was about to give up. It was in a small pot for a couple of months and when I transplanted it, it died. :(
@@feralkevin Well it seems like it is a chemical reaction with the alcohol extraction because the oxidation process that occurs reducing it to a dull brown color. Thank you so much for the description. It helps a lot in understanding what is going on.
Looks good. Word of caution to sterilize your mason jars and water ahead of time. That "pickly" flavor might not be just the "probiotics" doing the fermentation :)

The color is super cool. The alcohol extract certainly does not take on the beautiful color, more like a dull brown.

@@RawOrganix420 I like the fermented water extract for the fun color and potency but the alcohol extract works better for long-term storage.

I fermented it in the fridge, but recently I've been making tea with the leaves and it seems to have the same effects.
