Instead of using white wine use pure green grapes juice see the difference of taste, why would I mixed my food with alcohol? Damn seriously i hate people when they add wine or other type of alcohol in food.

I would use lemon juice
if all your clams are cracked open like that before you start to cook them, then they are not fresh anymore.
I agree dont uss open clams. They should be like that after 5 min in very little water

You would be surprised how many dishes use alcohol.
There is no alcohol in the final dish because it all evaporates.
