Hi dear. The bread will soak up the liquid so ur chutney wont get watery also the bread has a lot of oil so it will make the chutney creamy and yes dear I cut the spinach with a knife. But u don't need to cut it to finely for the chutney.

The bread contains using quite of lot of oil. Some Baker's use butter, some oil. Thus adding just a few slices gives the chutney the creaminess that it needs
To get that vibrant green colour we add the spinach and if u add pudina the colour will change to dark green if u don't use within few hours. Plus the pudina dosnt taste good in sandwich chutney.
The bread is added so it's soaks the moisture to keep the chutney dense. And pudina does change the colour to darker shade plus it's a sandwich chutney so it needs to have a base taste to compliment all the vegetables and mint leaves can become overpowering to some people. Hope that helps ☺️👍

If u want u can skip, but spinach gives a good colour and enhances the taste, it also helps make the chutney thick.
