I think the chutney is a mixture of mint, Cilantro, green chili, salt, lime. Called Pudina chutney for sandwiches. The spice mixture is probably chaat masala. They sell in stores.
Go for it. Its the easiest thing you can make. That chaat masala you will get at any Indian or asian store. (the brown powder he puts after the potato application) and for the cheese get amul cheese cubes / slab from the same store if you want it authentic.
