Bacon Wrapped Smoked Armadillo Eggs - How To

    Today, Todd and I are here to show you how to make these glorious Bacon Wrapped Smoked Armadillo Eggs! Armadillo eggs are a classic Texas BBQ staple. Filled jalapenos are wrapped in pork sausage and smoked low over oak. Each pitmaster has their own secrets, of course. The jalapeno filling may have a special blend of cheeses, the sausage may be seasoned with a secret blend of spices, and they may or may not be brushed with BBQ sauce during the smoking process. I had to take my own liberties with the recipe, of course, and added a little more pork to the party by making mine bacon wrapped armadillo eggs. Come hang out with us and see how it's done!

    Ok update ::: I just made these today exactly by her recipe, I made 12 so I double the ingredients and I used like she did , 1/6 of a pound of ground pork per pepper ...6 of them I use a mild pork rub, and the other 6 I used a spicy hot rub with a hot bbq sauce at the end , ...I smoked them with pecan wood on my new Oklahoma Joes Bronco Pro drum smoker , ...I smoked at 250 exactly and started to pull off the first 5 at 165* degrees , ...tasted it and the pork meat was a little dry and the pepper was fine with a very slight crisp to it....so I decided to pull the rest at 155* degrees and the pork was MUCH better and not dry but the pepper was a little too crisp now for my liking ...so I would recommend to pre char the peppers on a gas grill first for a bit to soften them a bit first (before you stuff with cheese ) and pull them off the smoker at 150-155 , ....150 would be prime ....don’t worry pork is safe to eat at 135....And pasteurization happens @ 130 degrees as long it was at the 130 degree mark for at least 1 hour ... so pulling them at 150 would be best for Juicy meat Since the pork is really about 1/4 in thick at best ....

    Great video thanks! You both are so pleasant and engaging. One suggestion I'd make as an alternative--what I do with the jalapenos is cut a 'double door' in the front rather than cutting the tops off. I make a slit along the length of the jalapeno, then at the top and bottom I make a cross-wise small slit. This lets you open the jalapeno like a box. You can then scoop out the innards, and it's easier to stuff because you have access to the length of the jalapeno. When stuffed, close the 'doors' up and the wrapping will keep the incisions secure. This way you don't lose any stuffing and you still have the attractive top of the jalapeno with a nice stem handle. Hope this helps!

    I made these up for the football game last night - huge hit! I toasted the jalapenos in an air fryer for a couple minutes before the wrap. They turned out awesome!

    Pro tip: get a disposable piping bag, slightly warm (not melt) the cheese mixture, fill the bag with the mix, use the piping bag to fill the jalapeños. So much easier than trying to stuff with the spoon

    If you don’t wanna buy yet another kitchen gadget, I find the handle end of a fork or spoon works about as well as anything else for hollowing out jalapeños

    I made them today came out great. The only change is I might put cap back on with tooth picks to stop stuffing from leaking out. Used your rub and bbq sauce.

    I like to make a slice in the end of the jalapeno so the air can escape easier. makes stuffing easier

      It's a totally different animal. Poppers make a lighter appetizer while these could be a main course.
