Well, there are so many. The best is, of course a real Hammond Organ for the bubble, but the Nord keyboards (Stage and Electro models) are incredible for both organ and piano sounds. You can dial in an old upright piano sound to get a pretty good old school sound. I also have been using a Hammond SK Pro which has better organ sound than the Nord, in my opinion, but not nearly as good piano and e. piano sounds. Play on!
1:49 Worth noting that the Hammond harmonics are only approximations, done in terms of pitch shifts of whole semitones rather than exact multiples of the fundamental frequency. This is why you get the 6th and 8th harmonics, but not the 7th-because that would be too far out of tune to be approximated convincingly.

do you use percussion?
Usually not. I mostly use percussion when I'm playing a lead line or soloing. But some may use percussion if you want the chop to cut through.
