    Mangalorean Pork Bafat is typically served with rice, sannas (steamed rice cakes), or neer dosa (thin, crepe-like rice pancakes), making it a versatile dish suitable for various accompaniments.
    This dish is a staple in many Mangalorean households, especially during festive occasions, and reflects the region's love for robust and well-spiced foods.
    Ingredients:
    1 kg pork
    4 large onions cubed
    3 green chillies slitted
    2 pods garlic
    2 inch pc ginger
    3 bay leaves
    whole spices, cloves, cinnamon, 2 cardamoms
    tamarind pulp or vinegar
    salt to taste.
    3/4 tsp nutmeg powder
    Masala:
    2 tbsp coriander seeds
    1 tsp cumin seeds
    1/2 tsp pepper corns
    1/2 tsp mustard
    1.5 tsp Mixed garam masala
    5 short chillies for spice
    5 kashmiri chillies for colour
    8 badage chillies
    1 onion medium sized
    1/2 tsp turmeric powder
    water to grind
    Method:
    1. cut pork to bite size pieces, wash and transfer it to a cooking vessel.
    2. add ground masala, 3 cubed onions, green chillies, ginger, garlic, bay leaves, whole spices, tamarind pulp or vinegar, salt, Add masala water and keep it to required consistency, cover and cook on medium flame for 10 mins, stirring it occasionally.
    3. After 10 mins, reduce the flame to sim, add 1 cubed onion, check for salt and sourness. If required, add salt and vinegar or tamarind. cover and cook till done.
    4. Sprinkle nutmeg powder. and put off the flame
    5. Serve it with Sanna, Appam, Bread, Chapati, roti, Bakri, mutli or Rice. Anything of your choice.
