    Hi, we are Stephen, Jess, Hunter and baby Koa - an Australian family who have had quite the journey. After travelling the world as a couple in 2020 we had our very first baby, we then spent the following year self-converted a van before moving into it full-time to drive around Australia. Cut to 2023 we welcomed our second child Koa into the world before resuming full-time travel around the world.

      @@flyingthenest it was quite an adventure, we got stuck in a blizzard in myvatn but otherwise our Iceland bingo card was pretty full. We always plan to much and then are toast at the end of the day. If you ever get bored there’s a good playlist. I can’t wait to go back tbh. But in summer vs end of winter. The roads were pretty treacherous in the north. It’s so friggen gorgeous through. When we were landing in Keflavik we saw the volcano erupting on its second eruption. So epic guys! Hope your group trip goes well and you get to see northern lights.

    Oh, how I miss Iceland. We did the food walk on July 8th - our first day. It's such a great start. My son ain't that fond of fish, he's a big meat eater, but he fell head over heels in love with the Artic Char dish. So much so that when we got back 13 days later and were going to have dinner somewhere he immediately said: Let's go to Mesinn and have the Artic Char. He could choose anything and choose the fish dish. I am still a bit in shock. 🙂 The dish was just as delicious the 2nd time. Looking forward to the rest of your trip. Hugs from Sweden. 🔵🟡🔵🟡🔵

    I wanna go to Iceland sooooo bad! But I’m also allergic to seafood, so I don’t know how well I’d go! (Also considering the fact that I have a lot of sensory and smell aversions to food.) But nevertheless I figure it out and I will plan a trip to Iceland one day! I have a lot of chronic health conditions (And have had over 50 surgeries) which are also stopping me right now but maybe one day? All I can do is plan that trip and hold onto that dream and hope. After all sometimes hope is being able to see that there Is light despite all the darkness. ❤

    cured seafood ISN' T raw. it's technically 'cooked', just not with flames and a heat source. the salt and acid remove the fish from a RAW state, and it's how fish has been eaten for centuries 😊

    • @geezygee
      @geezygee 4 วันที่ผ่านมา

      salt cured is quite the experience, if you haven't left. fish is soaked in massive containers of crystal salt, and once cured you actually rehydrate it in several water (or dairy) baths, over and over again, until the salinity is gone from the 'bath water'; it tastes similar to its cooked state before the salt ... it's a trip
