🔵 Stabilised Whipped Cream Homemade Cool Whip Recipe

  • Stabilised Whipped Cream, or Stabilized Whipped Cream - Homemade Cool Whip - Is an essential recipe if you want whipped cream that will hold it's shape in or on another dessert recipe. Or if you want a more natural alternative to the chemical laden 'Whips' at the grocery store.
    Ingredients:
    1 1/2 tsp (7 mL) unflavoured gelatine
    4 tsp (20 mL) cold water
    1 cup (250 mL) 35% whipping cream
    2 Tbsp (30 mL) icing sugar
    1 tsp (5 mL) pure vanilla extract
    Method:
    Best practice is to make sure your cream, bowl and mixers are chilled.
    Sprinkle gelatine on top of the water in a heatproof bowl.
    Allow gelatine to soften for a minute or two.
    Whisk water and gelatine together, then microwave for 10-15 seconds.
    Whisk again until gelatine is completely dissolved.
    Allow this mixture to cool to room temperature.
    Beat cream until frothy.
    Beat in, icing sugar and vanilla until it has reached soft peaks.
    Continue beating, and slowly pour in gelatine mixture.
    Beat until whipped cream holds a stiff peak.
    This whipped cream will hold for several days without deflating or weeping.

    I know this is an old recipe, but for those who don't know, in Australia (and possibly NZ), we don't have "Cool Whip", but we have "Thickened Cream", which is heavy cream combined with gelatin, ready for whipping as a stabilised whipped cream. To that, we usually sweeten it and sometimes add vanilla or other flavourings.

    I've been using this recipe to stabilize whipped cream icing for my tres leches cakes. Part of the charm is having a nice fluffy frosting.

    I've used this recipe a few times and it has proven to work very well. I allows a dessert to be made the night before without worrying about the whipped cream.

    Worked perfectly! I got some Strawberry-Banana Jell-O from USA; poured it over some exotic fruit cocktail then used this as topping. Incredibly good! Thnx from Scandinavia.

    All you really need to do is blend the cream slow to medium speed, until foamy, the cream will hold its shape for days. Blending too fast makes the bubbles too large and will not hold its shape.

      Knox isn’t too gamey. Vanilla and sugar masks the smell. Did you try this recipe? I made marshmallows last night with Buttery Baker’s elixir.Yummy 😋

      Did you add enough water ? Maybe you can try gelatin sheets instead

    Thank you for this recipe! My favorite cake is pineapple whipped cream cake. And it has to stay cold. Now for a request. Would you do a video on aquafaba? I have seen videos of people making 'Aquafaba'. I call it bean juice whipped cream. I have considered trying it in meatloaf, as a substitute for eggs. Thanks again!

      Aquafaba... We have tested it extensively behind the scenes, and have decided to not do a video. We just haven't had good experiences with it, it sort of tastes 'off' to us.

    why do everyone add vanilla and sugar into whipped cream? i dont get it. the best flavor in whipped cream is the natural taste of whipped cream.
