I make my stock with no salt because that way I can add it later depending on what I'm using it for..specially because when I make corn bread I dont want it to be salty.. but yes you must try it so much more flavorful 😊
Starting some today in stockpot, love corn broth from fresh local corn. If you want to take it even one more step dry out the used cobs(*I save husks too) for firestarters.

I went in on making Syrup, totally blind to procedures, this year. I started with 60 raw cobs, in a huge jelly pot, covered in water. I boiled for about 3 hrs. Then removed the cobs and kept boiling for another hour. Then i cooled and filtered with coffee filter over a sieve, which took a while, since it is no longer thin as water. Then i brought it back to boil and boiled for another 2 hrs.. I added zero things to this. I ended up with 3 pints of golden watery syrup. (i got impatient and bottled it!) It is not as thick as store bought syrup. But i know the ingredients and that it is not GMO corn! And that is what matters to me! I still have the last bottle i bought 25 years ago, of the Store stuff. I am nervous to use it. I really do not use corn syrup for anything. But this is the year i am doing lots of adventures! I bought a pressure canner, so i canned corn nibblets from raw corn. Thus i had 5 dzn raw cobs....so make syrup! Lol
We definitely throw away cases of these when we prep to make 4-5 gallons of corn juice for one of our property's outlet. Definitely going to try this next time.
Hi! You can make stocks and broths from all sorts of vegetables. Generally, you'd want to stay away from things like broccoli, cabbage, bitter greens, generally anything in the Brassica family - as they are too overpowering and/or will make your stock bitter. But almost everything else works. A very basic vegetable stock would be onions, celery and carrots simmered for 30-60 minutes and then strained. Herbs like parsley, thyme, rosemary and spices like bay leaves and peppercorns really add a lot of flavor. Garlic, leeks, shallots - all aromatics are amazing for stocks and broths. Can I use the ten cobs I have and roughly double the water? Seems like it would be easier than making two batches since I have that many cobs after freezing corn kernels. .
I wonder how it would be to cook the cobs until they're falling apart and put them in the blender and then I have them back into the corn stock you just made, wonder if that would make a good way of getting your fiber

I wouldn't throw that liquid out. But to get a real stock, you'll need to simmer it for longer. I would take off the kernels and then simmer the cobs for longer to make a good stock. You can also toss in whatever vegetables/aromatics you want with the cobs if you want!
Corn stock is awesome for using to make tortillas and tamales instead of just plain water..taste so much better

I read somewhere that if you completely dry the cob out you can use them in a fire for heat. Haven’t tried it myself yet.

You can use this stock anywhere that calls for water or vegetable broth or stock!
can you use the husks or silk for anything?
The husk can be used as food wraper and the silk as tea (I just heard about the silk as tea btw).
our favorite way to make corn is to microwave it in the husk for 3 1/2 minutes
