OBSESSED WITH OLIVE OIL DOCUMENTARY - CHAPTER 6: FINISHING
The new wave of olive oil producers, growers, millers, tasters and the whole wave of younger people that are going back to the groves and bringing them back they're obsessed, they're laser focus obsessedon the quality of the product. They understand the tradition, they understand that it's harvest time they understand the importance of olive oil as a whole to the culture, to the table, to the food.
But they've discovered a different element of it and like an artisan, and human nature that we keep pushing forward to actually get better at what we do and who we are. That's the same thing that's happening in olive oil and every single year, olive oils are getting better and better and better.
So, you can get olive oils that are pushing the polyphenolic content and antioxidant levels so you're boosting the health benefits. Or you can actually make olive oils that are softer and quieter and nicer and mellower for the palate. There's nothing traditional about that. That's actually innovation, that's artistry, that's the willingness and the want to just keep making better and better oil and a better product every year.
So, olive oil is a part of our lives, is part of our culture and is a real gift. I don't know if from the gods, if they exist but certainly a gift from Mother Nature which we always have to keep in our minds.
