    PNW harvester/freediver here, generally the purple ones taste better than the bigger red ones

      I think he was going bigger is better like most fish, but often times the smaller ones have the more delicate flavor with different nuances depending on the region

    In New Zealand we call the urchins Kina. Too many cause ‘Kina Barren’s’ where the eat EVERYTHING. Stops the kelp and sea weed etc growing which is the foundation of an ecosystem where juvenile fish, crays etc get started. Keeping their numbers down (impossible to get to zero) is a tasty and rewarding way of supporting the marine environment.

    Hey Matts, fellow Bay Area OG here…I’ve had uni from different parts of Japan and all the way to the East Coast (US), but NOTHING compares to Santa Barbara uni. It’ll convert the most hardened uni naysayer.
    Also, best way to eat that wagyu…take a hot-ass cast iron skillet, salt and pepper, and just sear it for a couple of minutes on each side, that’s all. Should never cook a wagyu beyond medium rare, to get the most flavor out of that A5 rendered fat (don’t let it drip away).

      I have heard from Japanese chefs that you actually want to cook it a little more than regular steak, closer to medium than rare. The reason being it is so fatty that you want the fat to warm and melt. Ordering A5 rare is allegedly a big no no. Tuna rare makes sense because it is pretty much pure protein unless you are closer to the belly. Also, tuna fat has a lower melting temp than beef fat. My favorite way to eat wagyu or hanwoo is Korean BBQ style, where you cook perfect bite size cube morsels and eat them straight off the grill, char with a burst of fat and juice.

    Uni cream sauce on pasta is delicious, I don’t like uni by itself but when I tried uni pasta it blew me away, definitely worth a try for even non uni lovers!

    Just got back from the North Coast. The Family and I got on Mussells, Sea Urchin, and Surf Perch. So awesome. Looks like we're thinking the same thing for Thanksgiving. 😃

      Not sure where in North Coast you harvested the mussels, but might wanna check biotoxin hotline for mussels if safe to eat. As of November 2nd, there are shellfish safety notification with dangerous levels of PSP in San Mateo and Humboldt counties.

    Try eating uni with coconut vinegar. We call it "suka tuba" in the Philippines. It's like spicy vinegar from coconuts.

    The coldest water I've had was lake tahoe.
    I don't know if the elevation makes it worse but I have swum in 7 celcius in cape town and it's not bad. But after 20 minutes your wrist seizes up a bit and you have to get out

    The Uni in souther California taste better than up north in my experience. For some reason up north they are more bitter and are not as creamy. And believe me from the many years of AB diving I’ve tried many many times to find good uni in many different spots and only have had it were they actually tasted good a couple times.
    Maybe do uni pasta to just get the creamy texture in the sauce with a hint of the uni taste.

    I've lived in Northern California all my life. And the west coast ocean is always God damn cold. Unless you go way down south. Ive gone diving in Mendocino like 5 times and i was freezing the whole time, every time. I can't believe you willingly go diving in it. I havent been diving since they closed abalone harvesting.

    Aye bro just a heads up that it seems the 25 seconds you cut from the vid didn't translate well audio to video for Roku devices. Full audio with the video spaced far ahead. TH-cam on Roku always starts with visual cutting open the wagu but audio is when you're at the store. Your vid on TH-cam via phone looks solid in sync though. Much love.     heads up chap ,,,,if you cut the uni (kina) in half you can hold one h a lf firmly in your hand and give it a hard downwards flick to dislodge the innards only the tongues or gonads will rem a in in the shell and easily scooped out with a teaspoon,,,,old school maori ways,,,,
