I've done it. it works. Did most of the quests before even starting with archery. Started out with magic, then went to melee. All magic schools are at 100, one and two handed are both >80, as is light armor. Resettet smithing and cojuration. Archery is still as 65 or so. But there are a couple things where you need a bow. Mostly some dwemer puzzles. Which can also be done with magic, but that is much more tedious.

Bound bow is for the wizard who wants to hit those dwemer windmill puzzles and fire pots economically.
Magic opens many doors. Especially alteration magic. That literally opens doors.

And if you want to be stealthy but not be an archer, silent casting is your friend.
