BEST vegan stew of ALL TIME!

This week I’ll share this AMAZING vegan Curry Pumpkin Stew (my absolute favourite stew of all time)! 😱🤤

Ingredients:
1/2 Hokkaido pumpkin
1/4 cauliflower (or carrots, sweet potato etc vegetable to taste)
1 red onion
3 cloves of garlic
1cm ginger
2 cans of coconut milk
3 table spoons tomato pure
150g water chestnuts
200g tofu
1-2 tablespoons peanut butter
2-3 tea spoon curry
1 tea spoon cumin
2-3 tea spoon thyme
A bit of chili (can be excluded)
1 pinch of nutmeg
1 tea spoon grounded coriander
A pinch of cinnamon
Salt and pepper to taste
Chop the onions fine. Chop the garlic and ginger very fine and put it together with onions and a bit of coconut oil in a pot. Turn on medium heat and let it stay while you chop the other vegetables. Chop the other vegetables into squares (ca. 1cmx1cm) and add them into the pot. Add the coconut milk, peanut butter and tomato pure and stir well. Chop the Tofu and water chestnuts (0,5cm x 1cm) and add them to the pot. Add the rest of the ingredients and let the stew cook for 3-40 minutes on low/medium heat.
Serving: Serve it with rice, flatbread or naan bread. And top the stew with roasted pumpkin seeds, green lentils, soya roasted chickpeas or as you like.
Storage: can be stored covered in the fridge for up to 1 week.
The stew is vegan and all-natural, and it taste absolutely AMAZING!
