I think mining and skinning are a great choice, I'd look into buying weapon enchants too, they look awesome and help a bit in dpsYou could use a fishing rod to do damage too lol

The damage of skinning knife should be tied to your skinning skill, similarly to fishing poles is tied to your fishing skill
