    Mate, I know this post is a couple of years old, but I've just found it. I've cooked it twice now exactly as you suggested. Both times, it was classified as 'restaurant quality' by my dinner guests. I serve it with green beans gently sauted in butter (of course!), topped with lardons. Great recipe and brilliantly presented. Thanks mate! PS..your recipe for the legs also worked beautifully!

    Great vid! I'm gonna use this sauce/apple stuff on fish too. ( perhaps dab ) And btw, I have an identical T-fal ratty pan that has certainly been worth the money. Keep up the great work Scotty! 👍

    I adore Pheasant!! This dish truly looks amazing...... Next time I go to North Dakota Pheasant hunting I will give this a go ;)
    Here in Alaska we have an abundance of Ptarmigan, similar to the Scottish Red Grouse...... I might try this recipe with those dainty little birds or Hare...... Your recipe seems like you could use it with any "light" meat, pork, chicken, Pheasant or what not!

    There’s another chef ( who seems to live in a caravan ) has a simple pheasant breast schnitzel I’m going to try tomorrow. But this one’s definitely for next time. I’ve made a version of Scott’s creamy mushroom pheasant recipe many times, which is excellent, but I need a change, and himself seems to be genuinely bowled over by this dish.
    Tbh, if you have any contacts in the shooting community you can literally live on pheasant, they’re digging holes in the ground and shovelling them in. Maybe I’ll beat the economic squeeze by doing just that !? Going to need more recipes!

    This is quite similar to a dish we eat in Appalachia, the only real difference being that we dice the apple and some bacon as well and cook them together, then add them to the sauce and cook it until the apples fall apart and emulsify it. Also goes great on pork chops.

    Ok, So that meal looks VERY, VERY tasty
    But if I came home from doing a 12 hour shift and the wife dished that dinner up on my plate... I would NOT be happy...
    I want a good wholesome heap of grub on my plate... Not a a skimpy Pheasant and a dollop of sauce..
    Maybe a dozen 'Poached Pheasant Breast's served with beer' would make me happy. :)

    Cooking my 1st Pheasant!! .. It flew into the side of my house and broke its neck, I am going through uour videos and combining dishes..I dont have a big enough pan for the oven so Im attempting to cook both legs and breasts stove top!

    I've never tasted pheasant, what does it taste like? Is it like a cross between a chicken and a duck or what? Silly question I know but, had to ask. Loads of pheasants over the pond here in Ireland, you'd even see them on the rural roads here.

    Pheasant is so damn good. Wish it was more available here in the US. It is extremely hard to find here.

      The internet and Google are your friends. Go online and you will find many places that sell Pheasant. Or do like the rest of us: Go out into the fields with a good dog and get your own.
      A couple years of training with a shotgun, all the clothing, a dog with or without training (training costs a LOT more), time to traipse through the woods, and maybe in a decade you might be able to get your own bird.
      Shooting sports are not for pennypinchers or those that want instant gratification. Time, money, and effort are needed to be successful in this sport.
      I go to a game farm about every 3 weeks for a hunt. That's about how long it takes me to consume my 4 Pheasants from my last hunt. I go for fun and relaxation and to watch my dog work in the field. If I get a bird, it is icing on the cake. If not, then my dog and I had a wonderful day in the woods.
